To complete this How-To you will need: Absinthe A jigger A parfait glass A slotted spoon A sugar cube Ice-cold spring water A lighter or match (optional) Step 1: Pour an ounce or two of absinthe into a tall, heavy, thick-stemmed glass, like a parfait glass. Step 2: Place an absinthe spoon -- a flat, metal, slotted spoon -- across the rim of the glass. Step 3: Put a sugar cube on the slots of the spoon. Step 4: Slowly drip three to six ounces of cold spring water over the sugar cube until the sugar is dissolved. The absinthe will turn from transparent green to a cloudy green or yellow. In 2007, after being banned for almost a century, absinthe became legal in the United States. The re-evaluation came after European distillers pressured American officials to conduct real research on the supposed deleterious effects of the herbal liqueur. With scientific data debunking the common public misconception that traditional absinthe caused hallucinations or had toxic side effects, the US government lifted the ban and brought glee to American absinthe connoisseurs and distillers. But among the general public many of the myths still prevail. To help set the record straight Laurence Liss, Web Editor for Outside's Go, went to Alameda, California to speak with Lance Winters, Distiller at St. George Spirits, the first American absinthe producer in nearly 100 years.

Shake Strain Garnish and serve. Additional ideas. Substitute frozen berries for ice - don't strain, serve the drink with the berries. Add a bit of Cointreau to the mix. A quarter to a half shot can make a big difference.

August 2006 It's a drink so strong and feared, it still can't be produced legally in America. We journey to France to see how the 'green fairy' -- otherwise know as absinthe - is made. Absinth was the favourite tipple of French artists, poets and writers during the Belle Epoche. It was so popular, cocktail time was referred to as 'the green hour.'
