This video was reported, filmed and edited by video-journalist Stephenie Hollyman in Cut Off, Louisiana. Cut-Off is not the sort of town its name makes it out to be. Hugging the edge of the bayou, just down the road from Larose, it is home to Cajun shrimpers and their families. They have been here for generations, living off the water. Clifton Billiout Sr. shows me his boat, The Cajun Queen, which he has just finished having built. Her fresh white paint sparkles and her pine decks are freshly sanded. He says he has dreamed of building her all his life. He chose to craft her from wood, not steel because he wanted the Cajun Queen to be a " classic." His boat is tied up next to the road, near his uncle's trawler. Like a stunned prize-fighter who has just recovered from a knock-out blow, Clifton sits on the edge of his new boat with his uncle and discusses his future. All rights reserved. Copyright 2010. In the seventeenth century, the first European settlers left western France and sailed for the new world. Their destination was Cadie, or Acadia, a region of New France that is now called Nova Scotia. There, they and their descendants lived until 1755, when they were forced to leave by the British authorities. Many Acadians were deported to English colonies in what is now the southern US More wandered to the West Indies and elsewhere. Most of them eventually ended up as subsistence farmers in South Louisiana, where there was already a French population, and where the Spanish government welcomed Catholic immigrants. In Louisiana, they reconstructed their culture and made modifications to suit their new environment. They had contact with new groups, principally Native Americans and free people of color. This environment allowed Acadians, who in their rough and ready French called themselves "Cadiens" or "Cajuns", to combine elements of French, Celtic, Spanish, Native American and African music into a new and unique musical genre: Cajun music. This genre had almost two centuries to develop, mature and mellow before the first entrepreneurs and collectors arrived on the scene to make records. From: Allons A Lafayette by Steve Winick

It used to be the main school for the University of Louisiana system, but to avoid confusion with UL-Monroe, its placename is added; the university used to be called University of Southern Louisiana. Now just to be clear, this is not the fight song of Lafayette College of Pennsylvania. The fight song somehow grows on you because it sounds like the song is meant to give the heebie-jeebies to anyone not attending the school-especially if you are in a Sun Belt Conference school! Cajuns are people from Louisiana. There are nearly 3000 structures in the gulf of mexico, most in Louisana, together they make a massive artificial reef which I christened "The Great Cajun Reef" probably the largest congregation of artificial reef in the world. Diving beneath these platforms there is a treasure trove of life where before there was only muddy bottom. The platforms (and in Pensacola way, old shipwrecks) provide a structure for reef to grow. I am a huge advocate of the rigs to reef program.
