Let's see how to do! We'll need: • 1,3 lbs (600 g) of chicken breast slices • ¼ stick (30 g) of butter • breadcrumbs, as needed • 3 tbsp of mustard • 2 sage leaves, 1 sprig of rosemary and 1 bunch of parsley • the juice of 1 lemon • 5 tbsp of extra virgin olive oil, ground white pepper and salt First of all, finely chop the aromatic herbs and divide into two parts. Then prepare the marinade for the chicken: in a bowl, beat the lemon juice with 3 tablespoons of oil, salt and half of the chopped herbs. Put the chicken in a container and pour on the marinade: let it marinate for 30-40 minutes. After such time, put 2 ladles of the marinade in a pan, add the chicken breasts and let them brown on both sides. After browning, add salt, drip dry and spread with mustard, then coat with breadcrumbs... and brown in a pan with butter and 2 tablespoons of oil. In this video, Betty demonstrates how to make French Dressing Grilled Chicken. All you need to do for this recipe is lightly season your chicken breasts and pour some French Dressing over them and take them to the grill! This great and easy entrée was given to me by my hair stylist, Donnie Lee Philpot, who has beauty shops in London, Kentucky and Richmond, Kentucky. Thanks for a wonderful recipe, Donnie Lee! Ingredients (for 4 chicken breasts): 4 uncooked chicken breasts, trimmed of excess fat salt and pepper (optional) about 1/3 of a bottle of French salad dressing Rinse the chicken breasts with clear water and pat dry with paper toweling. Lightly season with salt and pepper, if desired. Drizzle French salad dressing over the chicken breasts and work it in with your fingers (both sides). You do not need to let this marinate, but, if you choose to do so, just place plastic wrap over the breasts and store them in the refrigerater for about 4 hours. Place the prepared chicken breasts on an outdoor grill, away from the direct heat. Grill for about 15 to 20 minutes, turning as desired. Be sure to grill any type of chicken until done all the way through. You can leave the chicken breasts on the grill a little longer, if you want them browned a bit. If you do not have an outdoor grill, you may use an electric kitchen grill, or you may bake these chicken breasts in the oven on a broiler pan at 400 degrees for about 25 to 30 minutes. In this video, Betty describes how she makes her delectable Southern Oven-Fried Chicken recipe. It is crispy and delicious and very easy to make! Ingredients: 2 pounds uncooked chicken breast meat (cut to make 4 equal-sized breast pieces) meat tenderizer to taste 1 cup of flour (for dredging) ground black pepper to taste 3 tablespoons cooking oil With kitchen shears, cut off all excess fat, tendons, and gristle from the uncooked chicken and discard. Divide the 2 pounds of chicken into 4 equal-sized pieces. Sprinkle meat tenderizer (which takes the place of salt) on the top and bottom of each piece of chicken. Pour 3 tablespoons of peanut oil into and iron (or similar) skillet, and begin to heat it. (Watch it carefully, so that it doesn't smoke or burn.) Meanwhile, place 1 cup of flour in a zip-lock bag and place each piece of chicken (one-at-a-time), shake to coat the chicken with the flour, and place each piece of chicken into the hot peanut oil. When each piece is brown on the bottom, turn it, until all four pieces are turned. Immediately move the skillet of chicken to an oven that has been preheated to 400 degrees, and place the skillet on the center rack. Cook for about 25 minutes, or until done to your desired crispness. Remove the skillet from the oven and place it back on the cooktop. Ingredients: 2 1/2 pounds uncooked chicken breasts, cut to individual serving sizes meat tenderizer, to taste 1 inner packet of Ritz crackers, finely crushed 3/4 cup grated Parmesan cheese 2 tablespoons fresh chopped parsley 1 stick of butter or margarine, melted cooking oil spray fresh ground black pepper, to taste Use kitchen shears to remove any excess fat from your chicken breasts. Now, sprinkle them lightly with meat tenderizer, top and bottom. Next, make your coating: In a ziplock plastic bag, empty 1 inner packet of Ritz crackers, close the bag, and use a dough roller to crush the crackers until they are very fine. Place the grilled chicken breasts on a nice platter and garnish with fresh rosemary, if desired. How to Make a Delicious Chicken Piccata This Chicken PIccata recipe is the ultimate, delicious but so simple dinner party food. Easy to make but amazing to eat. The recipe shown in the video is for a larger group and serves 8 to 10 people. That is why I use a cookie sheet and the oven. For a large group, it's not practical to use only the frying pan on the stove. (But, if you are making this for just 4 to 6 people, you could just do all of the cooking in the pan. In that case you would brown the chicken as shown in the video, and then, instead of putting the chicken in the oven on a pan, you could put it all back into the frying pan and cover it on the stove, on a low simmer for about 15 minutes). Serves 8-10 Ingredients 4 skinless and boneless chicken breasts, butterflied, pounded thin and then cut in half Salt and freshly ground black pepper 1 cup all-purpose flour, for dredging 4 tablespoons unsalted butter 1/4 cup olive oil 2 lemons, 1 juiced, 1 sliced 1 cup dry white wine 1 cup chicken stock 1 bullion cube 2 tablespoons capers, drained 1/3 cup fresh parsley, chopped Directions On a cutting board, fillet each chicken breast and trim off any fat. First Douglas shows two methods of packaging the chicken breasts: a clamp-style vacuum sealer and his water displacement method for Ziploc bags. Then he cooks them for two hours in a SousVide Supreme at 140F. Finally, he shows two methods of searing the outside: first in smoking-hot oil and then in shimmering oil after applying a glucose wash (which promotes the Maillard or browning reaction).

In this video, Betty demonstrates how to make her impressive Baked Chicken breasts with Sour Cream Gravy recipe. This chicken is slow-baked in the oven and is lusciously tender with a mushroom-sour cream gravy that is tangy and as smooth as silk! Ingredients: 2.5 pounds chicken breasts (I came out with 10 fairly evenly-sized serving pieces.) 2.25 oz. jar of dried beef or sliced deli ham (I used the dried beef, but only 10 half circles of it.) 1 pint (16 oz.) sour cream 10 3/4 oz.can condensed cream of mushroom soup 5 or 6 slices of bacon, mostly cooked oil spray for baking dish Trim all excess fat and gristle from the chicken breasts, and then cut them into pieces that can be rolled up. If your pieces are thick and hard to roll, try pounding them flat with a mallet or hammer covered with aluminum foil. Place 1 or 2 half rounds of dried beef, or an appropriate amount of sliced ham on top of an uncooked chicken breast. Roll the chicken breast, until it encompasses the filling. Close with a toothpick, and place in an 8-inch by 10-inch baking dish that has been sprayed with cooking spray. Continue until you have used up all your chicken breasts and filling. now, make your gravy. Combine 1 pint of sour cream and a 10 3/4 oz. can condensed cream of mushroom soup. Stir until the two ingredients are completely blended. Pour the mushroom-sour cream gravy over the top of the individual chicken rolls that are in your baking dish. In this video, Betty demonstrates how to make nutritious and Hearty Chicken and Wild Rice Skillet. It is quick and easy to make, with chicken breasts, packaged fast-cooking rice mixture, and some cream of mushroom soup. It looks elegant, and it is very tasty! Ingredients: 1 1/3 cups milk 10 ¾-oz. can condensed cream of mushroom soup (You may use any cream soup.) 6-oz. package fast-cooking long grain and wild rice (including the seasoning packet) 4 boneless, skinless chicken breast halves, cleaned of any excess fat and gristle 1 tablespoon peanut oil In a medium saucepan, combine 1 1/3 cups mile, a 10 ¾-oz. can cream of mushroom soup, and a 6-oz. long grain and wild rice mix, with seasoning packet. Stir until all ingredients are well-mixed. Set aside. Place 1 tablespoon peanut oil in a medium to large skillet, and heat over medium-high heat. Place 4 chicken breasts halves in the hot peanut oil and cook for 5 minutes on each side. Temporarily remove browned chicken breasts to a plate with paper toweling while you pour off excess fat from skillet. Return the chicken breasts to the skillet, and pour the rice mixture over them. Bring to a boil. Cover, and reduce heat to low. Simmer for about 15 minutes, or until chicken is done and liquid is absorbed. This is a wholesome entrée, made in a healthy way.
