Two ways to keep fish for future use are canning and freezing. Two other methods are drying and smoking. Today we have the first of two reports describing, step by step, how to prepare dried or smoked fish. Begin with fish that are just out of the water. If the fish are small, leave their heads on. Cut off the heads if the fish are longer than twenty centimeters or weigh more than one hundred fifteen grams. Now clean the freshly caught fish. Cut off the scales and cut open the stomach. Remove everything inside. Then wash the fish in clean water and rub salt into them. Next, put the fish in a container with a solution of three hundred grams of salt and one liter of water. This will remove the blood from the meat. Keep the fish in the saltwater for about thirty minutes. After that, wash them again in clean water. Next, put the fish in a solution that has more salt in the water. The water should be salty enough so that the fish float to the top. If the fish sink to the bottom of the container, add more salt to the water.Cover the container with a clean piece of wood. Place a heavy stone on the wood to hold it down. Leave the fish there for about six hours. After that, remove them from the saltwater and place them on a clean surface. Cover the fish with a clean piece of white cloth and let them dry. Do-It-Yourself: How to Dry or Smoke Fish, Part 2

Today we have the second of two reports explaining how to prepare fish by drying or smoking them.We talked last week about the first steps of cleaning and salting freshly caught fish. The directions can be found on our website, voaspecialenglish.com. To dry fish, you will need either a drying table or a place to hang them. If a table is used, it should have a top made of wire screen or thin pieces of wood with space between each piece. Lay the cleaned and salted fish, still wet, on the table. Do not let them touch each other. Be sure that air can flow around the fish from all sides, including the top and bottom. Build a small smoky fire under the drying table for the first day to keep the flies away. After that, you can keep the flies away by covering the fish with a thin cloth. Do not let the cloth touch the fish. Fish taste better if they are out of bright sunlight while they are being dried. For best results, put the drying table under a tree. Turn the fish over every other day. Small fish will dry in about three days if the air is dry. Large fish will take a week or ten days to dry. After the fish have dried, place them in a basket. Cover them with clean paper or large leaves. Then put the basket in a cool, dry place off the ground. Make sure as much of the saltwater as possible is removed before you smoke the fish. How to make Takoyaki


Takoyaki is a popular Japanese dumpling made of batter, diced or whole baby octopus, tempura scraps (tenkasu), pickled ginger, and green onion, topped with okonomiyaki sauce, ponzu, mayonnaise, green laver (aonori), and katsuobushi (fish shavings), first popularized in Taisho-era Osaka, where a street vendor named Endo Tomekichi is credited with its invention in 1935. Takoyaki can be found in shops called issen-yoshoku , which roughly translates to "one-penny Western food". There is a similarly named dish called ikayaki but it is a broiled whole squid and bears no resemblance. Yaki is derived from "yaku" which simply means "to bake or grill" in Japanese, and can be found in the names of other Japanese cuisine items such as teriyaki or sukiyaki. Ingredient: Flour 140 gms. Baking Powder 5 gms. Sugar6 gms. Salt 2 gms. Fresh Milk 2 Tea Spoon Egg 2 Dried Fish Soup 2 1/4 Cup Stuff Ingredient: Fresh Octopus Chopped Cabbage Chopped Carrot Preparation: 1. Mix together baking powder with flour, sugar and salt. 2. Mix fresh milk with Japanese sauce, egg, fish soup and then continually pour the mix ingredient that we mix before. 3. Warm the electric Takoyaki cooker, turn on the power to no. 3-4 then put some vegetable oil. Put octopus, cabbage and carrot. Role it up in the round hole until it cook. Severed with mayonnaise and topped with Dried Fish.

This is the eighth video of a series I like to call the "Mitsuwa Tour". I'll be showing you my favorite Japanese import supermarket in Orange County. In this video: I take you through my favorite part of Mitsuwa supermarket, the CANDY ISLE! :D Japanese candy and sweets are awesome, fun colored packages holding delightful treats. Japanese snack foods are very interesting as most of them are seafood based, prepared squid, dried fish, and seaweed crackers are popular. I'm not one for dried fish, but it's still fascinating nonetheless. I also come across An Pan Man. An Pan Man is a superhero who has An Pan (red bean bread) for a head, and he saves starving people by letting them eat his head, which he replenishes at home via his baker parents. (The show was never released in the USA mainly because they thought American children wouldn't understand it.) Children's candy contains toys from various pop culture shows like Gundam and Pokemon. I remember collecting Kirby figures and Mario figures from candy here in the past. How to make this delicious Korean soup. Some people say it's a hangover cure! My recipe is here: www.maangchi.com Ingredients (for 2 servings): 2 oz (60 grams) dried shredded pollock, radish, garlic, fish sauce (or salt), water, green onion,sesame oil, egg, and water Directions: 1. Take 2 oz (60 grams) of dried and shredded pollock from a package and tear each strip into thin pieces by hand. They should be about 2 ½ inch long (6 cm). *tip: 1 package of dried shredded pollock that I use in the video weighs 150 grams (about 5 oz), so you could make 5-6 servings with 1 package. 2. Peel a radish and slice it into small pieces (2 x 3 inch and 1/8 inch thick) to make 2 cups' worth. 3. Slice 2 stalks of green onions. Mince 4 cloves of garlic. Beat 1 egg in a small bowl with a fork. Set them all aside. 4. Heat up a pot and add 1 tbs sesame oil. 5. Add the dried pollock strips and the minced garlic to the pot and stir it for 30 seconds with a wooden spoon. 6. Add 7 cups of water and the radish. 7. Close the lid and boil for 20 minutes over high heat. 8. 20 minutes later, open the lid and add 2 tbs fish sauce. 9. Lower the heat to medium-low and simmer for 2-3 minutes. 10. Open the lid and pour the beaten egg into the boiling soup. *tip: Don't stir the soup until the beaten egg is cooked and floating. 11. Turn the heat off and add the green onion. 12. Stir it with a ladle so the green onion is cooked a little by the boiling soup. Serve with rice and side dishes including kimchi. If <b>...</b>

So i stumbled across this Asian Market right outside of KC. They have all kinds of interesting items here from hard to find produce such as bitter melon, thai bananas, ginger roots, dragon fruit. They have hard to find items such as pork ears, perrywinkle, pig's uterus, tripe, pig's skin, pig's feet, duck tongues, duck eggs(balut) , chicken feet served different ways.
