In the second week of January 2010 with heavy snow on the ground, we are enjoying our own 2009 season pears from cool ambient storage. Santa Claus is past its best (quite a gritty pear), the Josephine de Malines are very good, but the Winter Nelis are perfect, although a few have gone off and had to be thrown away. These golden brown pears are sweet and melting with no grittiness at all. They are probably going to last another 2 or 3 weeks maximum. Its important with pears to check them regularly in store. Pears go from crunchy to perfect to just past perfect to mushy and inedible, and you have to catch them 'just right'. Better to eat some slightly before perfect than end up throwing them away after them have gone off, you have to get used to how your pears behave. As with apples, how long they will keep depends on genetics, the season, and how well they are stored. Only attempt to store undamaged fruit. Storage is ideally as cool as possible with a decent circulation of air and not too dry. Check them regularly. Pears are ideal if you can bring them from the cool into the warm a few days before they are perfectly ripe, but this is a bit of an art and you need to work out what suits your climate and taste preference. I strongly recommend Winter Nelis, (Julia agrees it has the best flavour of the three) although Josephine de Malines is also excellent. Santa Claus is rather gritty, less juicy and a poor third to the other 2, but its OK and does have extremely beautiful <b>...</b>

Just a few observations about handling apple and pear rootstocks. The quince A rootstocks by the way are the standard rootstock used to graft pears, quinces can also be grafted on them, but not apples. You can 'bench graft' stocks before planting just as they arrive from the nursery, and this is very convenient as you can work with them while sitting comfortably indoors and then plant the little graftlings out later. But I think you are more likely to succeed grafting on to a more substantial stock that has been growing in situ for a year. But I'm happy to be corrected on this if anyone knows better and can show us.

The opera of this month (actually, two months) is Handel's gentle Acis and Galatea. A quite short work, Acis and Galatea still has quite a bit of wonderful music: for example, Galatea's "Hush, ye pretty warbling" and "As when the dove laments her love", Polyphemus's "O ruddier than the cherry" and the duet for two lovers "Happy we". I do hope that you enjoy this beautiful pastoral opera (comments are required). There are many versions to choose from, but my favorite one is the Adrian Boult 1960 recording. Although it isn't terribly authentic (some repetitions are just skipped, there aren't any variations), Adrian Boult leads a very commpassionate recording, the soloists (Joan Sutherland, Peter Pears and Owen Brannigan) are top-notch; actually, everything is absolutely right. The first part includes: 1. Ouverture; 2. No. 1 - Chorus: "Oh the pleasure of the the plains".
