I think the best wok for home use is a 14", round bottom, cast iron wok. I pre-season these for my students because most people will not want to do the seasoning when they know what's required. (My website, eleanorhoh.com gives a comprehensive comparison of different types of woks incl. designer woks that look beautiful but are not functional. The worst is non stick.) A Single Man's Kitchen - Wok Abuse 101

A basic stir fry of shrimp, scallops, and veggies using my trusty old carbon steel wok. With practice, such dishes can be invented on the fly, or while you're standing in front of the fridge wondering what to have for dinner. Ingredients for one good sized serving: Shrimp - several Sea scallops - several Broccoli - A cup or so, cut into bite size florets Onion - about 1/3 medium, sliced Sweet red pepper - 1/4 large pepper, sliced Mushroom - 1 medium Portabello (or white) Garlic - 1 hefty clove Ginger paste - 1/2 tsp Garam Masala - 1/8 tsp Thyme - 1/8 tsp Dill - 1/8 tsp Horseradish - 1/2 tsp Peanut oil - 2 to 3 tbs, as needed Bacon - 2 slices, cut to bite size pieces Soy sauce (shoyu) - 2 tbs, Kikkoman or Aloha Lime juice - a couple of squirts Assemble per video. Serve over rice with more shoyu to taste. This easily scales up for a family of 4, with a slightly longer cooking time. This type of wok will maintain adequate heat. Tip: If you use a rounded wok, you will need a wok ring to set the wok on the grill. Step 2: Prepare ingredients Prepare ingredients before cooking either as called for by a recipe or by cutting meat and vegetables into uniform pieces to ensure even cooking. Step 3: Heat the wok Heat the wok on a hot grill before adding anything to it. Wait until the surface begins to let off some smoke and then dribble in enough oil to coat its surface, heating the oil for 30 seconds. Step 4: Add ingredients Add ingredients in small batches.
