Snail porridge Heston Blumenthal Serves 6 Ingredients For the snail butter 25g/1oz garlic cloves, peeled 40g/1½oz button mushrooms, finely chopped 40g/1½oz shallots, finely chopped 200g/7¼oz butter, at room temperature 25g/1oz Dijon mustard 20g/¾oz ground almonds 5g salt 100g/37frac12;oz flatleaf parsley, chopped 40g/1½oz Parma ham For the snails 72 cooked snails (this allows for about 12 per person, but can be reduced) 1 carrot, peeled and thinly sliced 1 onion, peeled and thinly sliced 1 fennel bulb, finely sliced 1 stick of celery, finely sliced 100g/3½oz button mushrooms, finely sliced 2 garlic cloves bouquet garni made from bay leaves, thyme and rosemary For the porridge 10g/½oz Parma ham 1 small fennel bulb 200ml/7¼fl oz snail cooking stock 60g/2¼oz porridge oats 70g/2½oz snail butter the cooked snails knob of butter 1 tsp sherry 3 tsp walnut oil Method 1. For the snail butter, blanch and refresh the garlic three to four times. 2. Heat 50g/1¾oz of the butter in a frying pan, and sweat the mushrooms and shallots for 5-10 minutes until softened. Keep to one side. 3. Put the remaining snail butter ingredients in a food processor and purée until smooth. 4. Rub the mix through a fine-meshed sieve, then mix in the Parma ham, mushrooms and shallots. 5. Mix in the Parma ham, mushrooms and shallots. 6. Heston Blumenthal/In Search of Perfection/Naan bread Serves 8 Preparation time 30-45 minutes Cooking time 2 minutes Ingredients * 750g/2lb self-raising flour * 20g/¾oz sugar * 2 tsp salt * 1 tsp baking powder * 230g/8oz water * 230g/8oz whole milk * 100g/3½ free-range eggs * ghee Method 1. Sift all the dry ingredients together and place in the bowl of a mixer fitted with a hook attachment. 2. Add the water, milk and eggs, incorporating them on a slow speed. 3. Once all the liquid ingredients are incorporated, mix for three minutes on a low speed followed by one minute at a medium speed. 4. When the dough is well mixed, transfer it to a generously floured work surface and knead by hand for an additional two minutes. 5. Divide the dough into 100g/3½oz portions (12 pieces), roll into balls and place on a floured baking sheet. Cover with cling film and refrigerate for at least two hours before using. 6. Remove all the racks from the oven and place two square pizza stones in the bottom in a V-shape: each stone should rest against the oven wall on either side and meet in the middle at a 45-degree angle. If your oven has room for only one pizza stone, you can use a small baking sheet or another metallic object to keep it against the oven wall at a 45-degree angle. We fund community projects to help farm workers and their families because Waitrose believe in treating people fairly. The Cape Peninsular has the perfect climate for growing lemons and each pack you buy contributes to the foundation fund. To make Heston's easy and delicious lemon tart start by zesting and juicing three or four lemons, add beaten eggs, caster sugar and butter. Stir the mixture until it thickens. Use Waitrose all-butter pastry for the tart casing and cook it first without the filling. Once the pastry is cooled carefully pour in the lemon filling and put it in the fridge for half an hour, to an hour and it's ready. Neil had been the Director of VisionSpring, a non-profit social enterprise that trains low-income women to start their own business selling affordable eyeglasses to individuals living on less than $4 per day in South Asia, Africa and Latin America. He was responsible for developing VisionSpring's award-winning strategy (Fast Company Social Capitalist Award '08, '07 and '05) and expanding VisionSpring's global presence from one to 10 countries.
