We've all heard of roasting chestnuts on an open fire but how many of you have actually tried them out? Chef Jason Hill shares some information about chestnuts and how to roast them. Chestnuts are in season September through February here in the US and are grown on trees throughout the US, Europe and Asia. When choosing fresh chestnuts, look for nice plump specimens that are free of bruising with nice shiny brown shells. But how to roast chestnuts? I simply grab a sharp paring knife and mark an X on the flattest side of each chestnut. We do this so the nuts won't explode when they are heated. Next, fill a large bowl with cool water and soak the nuts about 20 minutes. Preheat your oven to 400 F or get your fireplace nice and roaring. Drain the nuts and scatter on a baking sheet, X side up. Roast for about 12-18 minutes, or until the peels curl up a bit and the nuts are soft. For chestnuts roasting on an open fire, place in a long-handled frying pan (nonstick isn't recommended), a popcorn popper or chestnut roaster. Some folks recommend covering the pan. Roast for about 20 minutes, or until the peels curl up and the nuts are soft. We hope you enjoy this fun holiday tradition. Chestnut uses are plentiful, ranging from salted alone or dipped in sour cream, placed into turkey stuffing or candied. Enjoy!

How To Roast Chestnuts
Roast fresh chestnuts in the oven and add to your holiday dishes. Roasting Chestnuts To roast chestnuts, first preheat the oven to 350°. Using a small, sharp knife, cut an "X" through the shell on the flat side of each nut. Place the nuts in a shallow pan, and roast 25 to 30 minutes or until the skins open where the Xs are, and the nuts are tender inside. At 25 minutes, open one to check and see if it's tender. When the nuts are just cool enough to handle, squeeze them in a kitchen towel to loosen the shells. Then peel away the shell and the tough inner linings.

The Nat King Cole Trio first recorded the song early in 1946. At Cole's behest — and over the objections of his label, Capitol Records — a second recording was made the same year utilizing a small string section, this version becoming a massive hit on both the pop and R&B charts. Cole again recorded the song in 1953, using the same arrangement with a full orchestra arranged and conducted by Nelson Riddle, and once more in 1961, in a stereophonic version with orchestra conducted by Ralph Carmichael. Nat King Cole's 1961 version is generally regarded as definitive, and in 2004 was the most loved seasonal song with women aged 30--49, while Cole's original 1946 recording was inducted into the Grammy Hall of Fame in 1974. Mel Tormé recorded the song himself in 1954, and again in 1961, 1966 and 1992. "The Christmas Song" (commonly subtitled "Chestnuts Roasting on an Open Fire" or, as it was originally subtitled, "Merry Christmas to You") is a classic Christmas song written in 1944 by musician, composer, and vocalist Mel Tormé and Bob Wells. According to Tormé, the song was written during a blistering hot summer. In an effort to "stay cool by thinking cool," the most-performed (according to BMI) Christmas song was born.

This song is called "The Christmas Song" or "Chestnuts Roasting On An Open Fire". Music and lyrics by Mel Torme and Robert Wells. When I heard this lovely piano arrangement by Carsten Gerlitz (from the piano book "Christmas Dreams"), I knew that someday I want learning to play it, because of the beautiful jazz chords and voicings. As you see, I tried to play it very rubato and with an open time feel. I hope you like it. Thank you. Another great piano version of the same tune is by Vince Guaraldi from the "A Charlie Brown Christmas" piano book. Gear: Controller: Studiologic Numa Nero by Fatar. Roasting Chestnuts an effective, easy, successful approach.
FIRST AND FOREMOST BE CAREFUL THEY ARE HOT WHEN THEY COME OUT OF THE OVEN. TAKE CARE WITH KNIVES AND USE A CLOTH. Ever since being a child I have watched chestnuts explode and scatter the relatives as they were removed from the oven. I have tried a number of different ways of roasting chestnuts but this one works every time. If you put a little salt into the water when you are boiling them that gives a savoury taste to the sweetness of the chestnuts. If you let them boil for a few minutes it tends to soften the flesh of the chestnuts, you can see the shells opening a little and they can be roasted for a shorter time. It really depends on your taste in 'firmness' of the chestnuts. The timing in the oven depends on the size of the nuts themselves and effectively the boiling in water soaks into the husk and then makes it that the roasting assisted by steaming inside the shell. You can put them in the oven after you have been roasting the dinner. The best rule of thumb is to look at them in the tray and see how many have loosened from their shells. If you are doing this with children then you can soak them overnight. Care needs to be taken with the use of the knife; an ordinary, not ultra sharp, vegetable knife is good enough, you don't need to right throught the shell, the scoring is sufficient. Since posting this I have taken to putting the cuts in after the chestnuts have been softened in the water and when they are cool. No chestnuts were spared during the making of this <b>...</b>
