In this video, Betty demonstrates how to make a hearty dinner of Sage Flavored Stuffed Pork Chops. These are made with an instant stuffing mix, but, if you have leftover stuffing from your holiday meal, you can use that, instead. Ingredients: ½ stick butter or margarine, melted 1 ½ cups chicken broth + 2 additional cups chicken broth 6 oz. package instant stuffing (I used Kraft Stove Top Stuffing Mix—Pork flavor.) 1 teaspoon rubbed sage 2 thick-cut boneless pork chops--about 1-inch thick (You may make as many pork chops as your amount of stuffing and size of casserole dish will allow.) salt (or use meat tenderized with no MSG) to taste cooking oil spray In a medium saucepan, mix together ½ stick butter and 1 ½ cups chicken broth. Place over medium heat, and bring to a boil. Remove from heat. Add 1 teaspoon rubbed sage to a 6 oz. package of Stove Top Stuffing Mix. Add the stuffing mix to the hot broth. Place a lid that fits the saucepan on top of the stuffing and broth mixture, and let it sit for 5 minutes. While the stuffing is resting, you can prepare your pork chops. Take a sharp knife, and make a slice most of the way through each pork chop from the outside edge, making an open pocket in each pork chop. Salt to taste. When the stuffing has rested in the covered saucepan for 5 minutes, pack as much of the stuffing into the pork chop pockets as possible. Bone-in or boneless whatever your preference. Bone-in take a little longer to cook but are harder to overcook so they might be good to start with. If your boneless pork chops are more than an inch thick, I recommend butterflying them to give you a thinner piece of meat that will cook faster and more evenly. DRY RUB This will make enough to coat 4 regular sized pork chops. * 1 teaspoon each mustard seed, thyme, black pepper -- grind these together and add: * 1 teaspoon paprika * 1 teaspoon salt. Sprinkle about a half- teaspoon of the mix on each pork chop and rub it in. Then flip them over and sprinkle another half teaspoon on the other side. Rub that in. Turn your stove on high heat to preheat your skillet. Add about a tablespoon of butter and a tablespoon of oil to the pan and let it melt and get all sizzlin'. Put in your pork chops. Arrange them so that the bony side or the thicker side is towards the middle of the pan where it is hottest. Today we're going to talk about a somewhat basic rudiment applied in a couple interesting ways that you can incorporate into your grooves, fills and solos. The left hand lead seven stroke roll! When doing a seven stroke roll applied as sixteenth note triplets it's going to take three eighth notes for it's full duration. The "six" is two and the eighth note that makes up the seventh stroke. What we're doing in this video is phrasing three of them in a row. One starting on beat one, then the "and" of two and finally beat four with your seventh stroke being beat one of the following bar. Once we have the main phrase down, we'll take it apart and focus on one, two and finally all three of the seven stroke rolls in context. The first embellishment can sit in your groove nicely as a subtle fill. The second, however has a more gospel chops feel to it. When you rip that one it's a hell of a lot of fun!
