I'm Sonia and today we'll be preparing an old French recipe -- the base for assembling crepes. This recipe can be used for both sweet and savoury crepes. Let's take a look at the ingredients: • Just over 2 cups of milk • A pinch of salt • 3 eggs • 2 and ¾ tbsp of butter • 2 cups of flour Let's take a look at how to make them We're ready to make our crepes. First of all, put the flour in a tall bowl and be sure that the bowl is completely dry. Then add a pinch of salt, and pour the milk in while whisking the mixture. Keep an eye on the mixture for lumps and whisk them out if they form. Little by little bring the flour into the centre and continue to whisk until everything comes together. Now, add the three eggs. Beat them before adding to the flour mixture to be sure they'll mix in evenly. Just beat them with a fork and add them to the large bowl while whisking. This video will show you step by step how to make the lightest, most tender crepes ever, right in your own kitchen. Chantilly Crepes adapted from "The Cake Bible" by Rose Levy Berenbaum Makes 12 crepes Ingredients: 3 eggs 1 cup milk 1 tsp vanilla 3 tbsp melted, unsalted butter 1 tbsp Grand Marnier 1/8 tsp salt 1 tbsp sugar 90 grams (about 2/3 cup) cornstarch Mix all ingredients in a blender for 10 seconds. Heat a crepe pan over medium heat. Lightly brush the pan with melted butter or nonstick spray. Pour 2 tbsp of the batter into the middle of the pan and immediately begin swirling the pan to evenly coat the bottom. Let it cook for 10-15 seconds until the edges begin to turn brown and release from the pan. Gently lift the edge with a spatula. Carefully slide the spatula under the crepe, then flip. Cook for another 10 seconds, then turn the crepe out onto a plate. Notes: the cornstarch may settle out of the batter so remember to stir the batter a few times before ladling it out onto the pan.

Mille crêpe is a cake made with many layers of crêpe (thin pancake). Mille means "a thousand" in French. Although it is written in French, it is originated in Japan (I found this info on the Net). And of course, it is a very popular cake in Japan!!! I was so lazy that I made only 8 crepes and cut into half to make a half-round cake. hehe You will see how I did that in the end of the video ;) I used nutella and whipped cream for the fillings. They were absolutely delicious :D Of course you don't have to make Mille Crepe. You can just wrap your favorite filling in a sheet of crepe and enjoy! --------------------------------- Nutella Mille Crêpe Cake Difficulty: Easier than you think! Time: 20min Number of servings: half round cake Necessary Equipment: 26cm (10.2inch) frying pan Ingredients: ((8 crêpes)) 2 eggs *room temperature 100g (3.5oz.) cake flour 2 tbsp. granulated sugar 2 tbsp. melted butter 250ml milk *room temperature a few drops vanilla extract ((fillings)) nutella (chocolate hazelnut spread) 200ml fresh cream (heavy whipping cream) 1 tbsp. granulated sugar Directions: ((8 crêpes)) 1. Happy Mothers Day! (better late than never right?) On Saturday we went to the farmers market and got some outstanding strawberries. I decided that I wanted to have strawberry cream cheese crepes for breakfast so, I made some and decided to take you along for the ride. These can be made for breakfast, brunch, dessert or any time you want an amazing, elegant yet simple something for that someone special! Here is what you will need to make this recipe: For the Crepes: 1 cup flour 1 ¼ cups milk 2 eggs 1 tablespoon sugar 2 tablespoons melted butter For Filling: 1 8 ounce brick of cream cheese softened ½ cup powdered sugar 1 tablespoon vanilla For Topping: 2 quarts strawberries sliced ½ cup sugar Splash orange juice if you have it Prepare the crepe batter by placing all ingredients in blender and mixing until completely incorporated. Prepare the filling by mixing the cream cheese, powdered sugar and vanilla with a hand mixer until smooth and creamy. Prepare the berries, by washing and slicing and adding sugar and OJ if preferred and stirring until well blended, let sit to allow the berries to release their juices and macerate.
