Sea Cucumber expelling its intestines
As a defense mechanism a sea cucumber will shoot part of its resperatory system out of its body when bothered. Fish will go after the guts and give the cucumber time to scoot away and live another day. Our dive guide poked the cucumber a bit to get us to demonstrate. Since nothing was around to eat its guts, it quickly sucked them back in. Kind of gross but fascinating, and not harmful to the sea cucumber in the end. A very alien world down under the sea, especially at night.

Healthy Cooking: Cucumber Salad
11/2 cups English Cucumber, 1/2 red onion, 1/2 red pepper, 1/2 yellow pepper, 1/2 c. celery, 2 cups green olives with pimentos, 1/2 c. feta cheese, salt and pepper to taste, 1/4 c. Balsamic Vinegar. Quarter and slice cucumbers, chop red onion, seed and chop peppers, chop celery and place in to large bowl. Add sliced olives and feta cheese. Add salt/pepper and balsamic vinegar and toss gently. Let sit in frig for a couple of hours. Enjoy!

Last week marked the start of the cucumber selling season in Jenin. The Civil Administration, in coordination with security forces and the Ministry of Defense crossings operators, works to ensure the marketing of 15000-18000 tons of cucumbers, which in turn supply Palestinian farmers with approximately 60 million NIS in revenue. The produce is significant to the 3000 families of Palestinian farmers in the northern West Bank who consider cucumbers their primary source of income, as well as for Israelis wherein 60% of their cucumbers are brought from Jenin. 'Killer Cucumbers' not guilty: Mystery E.coli super-bug spreads
Spanish farmers are demanding compensation after it was proved they were not responsible for producing cucumbers contaminated with a lethal strain of E-Coli. Germany, which has been worst hit, is still trying to find the source of the outbreak which continues to infect people. Sixteen people have already died and almost five hundred are suffering severe symptoms after eating the vegetables.

Cucumber kimchi is made by turning a cucumber into a pocket and stuffing it with vegetables and kimchi paste. It's delicious, and goes well with radish soup. I'll show you how to make both of them for one perfect, well-balanced, low-calorie meal. Ingredients: 1. 6 cucumbers (10-12 kirby cucumbers) 2. carrot (shredded ¼ cup) 3. onion (¼ cup), green onions, Asian chives (2 cups) 4. garlic, fish sauce 5. hot pepper flakes, sugar. Directions: 1. Wash cucumbers and cut them in half crosswise . Make pockets out of cross slits, leaving about ½ inch on end and make 4 slits. (Don't cut them all the way through). 2. Put them in a big bowl 3. Sprinkle a half cup of salt onto the cucumber pieces, mix them carefully, and wait for 30 minutes 4. In a big bowl, place a quarter cup of fish sauce, a half cup of hot pepper flakes, 2 cloves of minced garlic and 1 tbs of sugar, and mix them with a spoon. 5. Chop Asian chives 1 inch (about 2 cm) in length (2 cups) and cut 3 green onions diagonally as the same size as the chives, shred some carrot (1/4 cup) , slice the onion (1/4 cup) thinly and place all this into the mixture of the seasoning paste. Mix it up with a spoon. 6. Wash the cucumbers and drain them. Stuff the seasoning paste into the slotted cucumber and put each cucumber into an airtight container. You can wear rubber gloves while stuffing, if you want to protect your hands. 7. Right after making it, you can eat it. But keep the leftover kimchii in the refrigerator. Radish soup <b>...</b>

Scooping the seeds into the glass and allowing them to ferment is an important part of the process. This removes all the pulp and leaves clean seeds. I believe that the pulp contains something that inhibits the seeds from germinating. So by removing the pulp by fermentation, the seeds are ready to germinate! The This cucumber is called "Burpless", I think in the old days eating cucumbers made you burp, so they breed a variety that did not make you burp and called it "Burpless". I have probably been growing this variety of cucumbers for the last thirty years and I have been saving and growing my own seeds.

This is just a mid summer update from the urban survival garden. That really is one cucumber plant that has taken over the trellis. The camerawoman had trouble staying in focus on the squash borers so I spliced in some footage of them. The clipping sound you hear during these shots is me cutting the little pricks in half!
