Mujigae means rainbow, so my ancestors must have got the idea for the name from a rainbow! I love it! This is an example of how they incorporated natural beauty into their everyday life. Even though the name of the rice cake is "rainbow rice cake," it is usually made with only 3-5 different colored layers. That's why this rice cake is sometimes called "colorful rice cake" (색떡, saekddeok). In this recipe, I am using 5 different colors from bottom to top: brown, green, yellow, pink, and white. The dough for ho-ddeok is made from wheat flour, milk, water, sugar, and of course yeast. The hoddeok dough is rises for several hours. You can see in the video that handful-sized balls of the thick dough are filled with a delicious sweet mixture that can contain brown sugar, cinnamon, honey, sometimes chopped peanuts. Once the dough is filled it is then placed on a greased griddle, and then pressed flat into circles with a tool that consist of a stainless steel circle and wooden handle.

외국인들에게 어떤 한식을 가장 좋아하냐고 물으면 나오는 대답은 김치, 갈비, 불고기이다. 나는 이 얘기를 들을 때 마다 갈비나 불고기는 어찌됐든 고기니까 외국인들 입맛에 어쩌면은 당연히 맞을 수 있다는 생각을 했었다. 그래서 이번에 국가브랜드위원회 주최의 UCC를 찍으며 잘 알려지지는 않았으나 가장 한국을 대표할 수 있는 음식을 생각해 보았다. 그러던 중에 생각난 음식은 떡꼬치였다. 누구나 편하게 먹을 수 있으면서도 한국의 색을 가장 잘 나타내는 떡과 고추장이 주 재료였다. 한국의 주식인 쌀을 이용해 만든 떡과 새콤달콤한 고추장은 외국인들의 입맛을 사로 잡을 수 있을거라고 확신하며 이 영상을 찍게되었다. 영상을 찍으며 인터넷 검색을 하던 중 한 TV프로그램에서 사회를 보는 프랑스인의 인터뷰 내용을 우연히 보게되었다. 그의 이름은 벤자민 주아누. 그는 퓨전한식에 강한 반감을 나타내며 말을 이어나갔고그 중 한 대사가 인상 깊었다. "떡도 코리안 라이스케이크가 아니라 떡 그대로 소개해야 합니다. 케이크라는 단어를 접하는 외국인들에겐 달콤하고 부드러운 것을 기대하는 고정관념이 반사적으로 나오게 마련이죠. 그런데 떡은 그런 맛이 아니잖아요. 기대했던 반응을 보이지 않는 외국인을 보면 떡의 찰진 질감을 좋아하지 않는다고 지레 생각하죠. 그러고는 떡의 정체성을 훼손하면서 어떻게든 케이크에 가깝게 만들어보려고 하고. 이런 어이없는 모습, 더 이상은 없었으면 좋겠어요. 우리가 이탈리아 음식인 피자나 스파게티를 말할 때 이탈리아식 부침개, 이탈리아식 잡채라고 하지 않듯 우리 음식 이름도 그대로 알릴 필요가 있다고 생각했다. 그의 대사를 본 후 나도 영상을 찍으며 라이스 케익이라고 하는 이들에게 떡이라고 다시 알려주었다.

So I got some ddeok (떡) and some hot pepper paste (고추장) at an Hmart. Since I have zero skill in the culinary arts, my dad decided to help...but...he made it taste more like Chinese rice cakes than Korean! But, it tasted fine. You can make it very easily at home because these days ready-made kits of ingredients for yubuchobap are sold at Korean and Japanese grocery stores. You may find them in Asian grocery stores, too. Ingredients (for 2 servings): 2 cups of cooked rice (made with 1 cup of short grain rice), yubuchobap kit, cucumber, carrot, salt, yellow pickled radish, vegetable oil, and canned black olives (for spooky eyes). See my site for pictures and descriptions of ingredients: www.maangchi.com Directions: 1. Chop cucumber and carrot into small pieces, about 1/3 cup worth. Put it into a bowl. 2. Add a pinch of salt and mix well. Squeeze out any excess water 10 minutes later. 3. In a heated pan, add a drop of vegetable oil and saute the squeezed vegetables for 20 seconds. 4. Chop yellow pickled radish into small pieces, about 2 tbs worth. 5. Make 2 cups of rice and put it into a large bowl. 6. Add the vinegar-based sauce to the warm rice. Mix it well with a wooden spoon. *tip: I suggest not pouring all the sauce from the packet into the rice. Add it little by little until you reach your preferred taste. 7. Add the prepared vegetables and chopped yellow pickled radish to the rice. Mix it well and cool it down. 8. Open the package of yubu and squeeze it slightly to drain out the extra sauce. 9. Here's how to make kongguksu, delicious and cold in summer! Full recipe on my website: www.maangchi.com Ingredients: Dried soybeans, mixed nuts, water, ice cubes, skinned and roasted sesame seeds, thin noodles, salt, cucumber, tomato 1.Wash and drain 1 cup of dried soybeans a couple of times and soak them overnight (8-12 hours). 2.Drain the soybeans and put them in a pot. 3.Add 2 cups of water and bring to a boil over medium high heat for 12-15 minutes. 4. Rinse the cooked soybeans in cold water. Drain and put them into a large bowl. 5. Scrub them with your hand to remove the skins. 6. Pour cold water into the bowl and the skins will float to the top. 7. Tilt the bowl and pour out the skins and water 8. Scrub the soybeans some more, add more water, drain and remove skins several times until all the skins are removed. 9. Put 1 cup of the clean soybeans into a blender. *tip: Keep the rest of the cooked and cleaned soybeans in the freezer for future use. 10. Add 1.5 tbs of mixed nuts, 1 ts of skinned and roasted sesame seeds (optional), 1 ts salt, and 2 -2 ½ cups of cold purified water. Blend for 2 minutes. 11. Add 4-5 cubes of ice and blend another minute until you get a soft, foamy, cold broth. Set it aside. 12. Boil water in a large pot. 13.
