One of my favorite foods! What's yours? This is my version of the Korean dish. I tend to like mine without a lot of sauce. =] How to make the hot pepper paste: www.youtube.com ingredients: - 1 package of rice sticks - 2 medium carrots diced - 1/2 onion diced - 2 cups king mushroom diced (optional) - 2~3 TBSP olive oil or any oil you prefer - 2 TBSP korean red pepper paste (seasoned with soysauce, sesame seed oil, and sugar) - 2~3 TBSP of water soak rice sticks in water for 10-15 mins. add olive oil to pan on medium heat. add carrots and onion. cook until onions are golden brown. add king mushrooms and stir for 1 min. add rice sticks and red pepper paste. stir. add about 2 TSBP of water from rice cakes and mix well. cook for about 3-5 mins or until rice cakes are tender and soft. sprinkle on sesame seeds for garnish. enjoy! =] twitter.com

In a pan, pour 4 cups of water and add 7 large dried anchovies after removing their heads and intestines. Boil the water for 10 minutes over medium heat. 3. Remove the anchovies and add the rice cakes, 4-6 tbs of hotpepper paste, 1 tbs of sugar, and 1 tbs of hotpepper flakes (optional). Stir it constantly. 4. Cut 7 green onions into 5 cm long pieces, and add them to the pot. 5. Keep stirring until the sauce is thick and the rice cake is shiny. 6. Transfer it to a plate and serve! Ingredients for mild ddukbokkie: 1 package of rice cake, beef strips, soy sauce, sugar, garlic, onion, king oyster mushrooms, water Directions: 1. Saute 200 grams of beef strips with 2 tbs soy sauce, 1 tbs sugar, 2 cloves minced garlic, and 3 tbs of sliced onion. 2. Add 3-4 sliced king oyster mushrooms and 2 chopped green onions to "1″ and stir it. 3. Add 1 cup of water and put rice cake in it and keep folding until rice cake is soft. 4. Serve it on a plate and eat it when it is warm.

Today we are making a Korean Spicy Rice Cake dish called Dukbokgi and it's being served with water kimchi. Please watch my other videos! Ingredients: - 8 oz of tube shaped Rice Cake (Any shape of Rice Cake works) - *Optional* 20 Pieces of Fish Cake - *Optional* A few ounces of any kind of Beef - 1/2 of an Onion - 1/4 piece of Cabbage - 1/2 of a Carrot - 1 Green Onion - 2 Tbsp of Red Pepper Paste (Gochujang) - *Optional* 1 Tbsp of Crushed Red Pepper (Gochugaru) - 1 tsp of minced Garlic - 2 Tbsp of Sugar - 1/2 Cup of Chicken Broth - 2 tsp of Soy Sauce - 2 tsp of Crushed Red Pepper - 2 tsp of Sesame Seeds - Boil 5 cups of water for Rice Cake. - Slice vegetables all around the same size. - Cook Rice Cake for 3 minutes and then rinse in cold water. - Combined ingredients to make Sauce and bring to a boil, then reduce to simmer until sauce thickens. - Add meat and cook for about two minutes. - Add all the vegetables, rice cake, and fish cake and cook for about 2-3 more minutes. - Finish with green onions and sesame seeds. - Serve hot. This dish is for vegetarians also. You don't need to add any beef, but I like to add beef in mine. This might be a bit spicy for those who don't like spicy foods. I'm at this kimbab(김밥) shop called "School food". Funny name isn't it? Anyway it was my first time here and I had kimbab rolls & street cheese dukbokki(떡볶이). The atmosphere here is great and there's a lot of menus that you can try. The price range is a little bit more higher than your usual kimbab(김밥) shop about 7000 won - 15000 won.

Choose thin white rice cake for Dukbokki purpose. Make seasoning, and mix it well. In a deep skillet, coat with oil, and pour seasoning. (red and green chilly pepper ,sugar ,red chilly pepper paste) Add rice cakes, and keep stirring until all the ingredients are cooked. if you need,add more soy source. Like That!!!!!! We put together a Taste of Korea Pavilion within The Great American Cooking Expo at Arlington Park Racetrack and what a HUGE success it was! Over 9000 people attended the event and many of them visited our booth. Our goal was to create awareness and promote Korean cuisine in Chicagoland. Our strategy was to bring Korean cuisine to the mainstream, rather than hope that they find us. We had a fantastic, hardworking, clever group of volunteers working together to promote the world's best kept secret...HANSIK! Chef Park of Woo Lae Oak Restaurant in Rolling Meadows performed a brilliant cooking demonstration of bibimbap. We had 200 people in attendance (sold out), all of whom enjoyed a generous sample of the delectable bibimbap he prepared. The audience raved about the dish and will certainly be visiting Woo Lae Oak for a full-size platter soon! People waited in the longest line at the expo to sample 9 different dishes, soju and makkoli. It was absolutely inspiring to watch as our customers enjoyed all of the foods and drinks of Korea. Here's what we served: Steamed mandu (Pulmuone) Tofu (Pulmuone) Japchae (Woo Lae Oak) Bulgogi (Woo Lae Oak) Rice and Gim (Assi) Fried mandu (Assi) Dukbokki (CJ) Kimchi (Bitgeoul Kimchi) White Kimchi (Bitgeoul Kimchi) Jinro Soju (Jay Midwest, Jinro) Makkoli (Jay Midwest) Nongshim generously donated over 1700 noodle bowls for our visitors to take home! Ingredients * 3 Cups Rice Flour * 1 tsp Salt * 1½ Cup Water * 1½ Cup Water + 1 tsp Sesame Oil Yield: 2.5 lb. Sticky Rice Cakes Special Music "Cuckoo Realkook" by "최창국-kook~*" Thank you. :D

Yubuchobap (Seasoned tofu pockets stuffed with rice)


www.maangchi.com Music: Jaurim's Carnival Amour Yubuchobap, made with seasoned fried tofu and rice is very popular lunch box and picnic food in Korea. You can make it very easily at home because these days ready-made kits of ingredients for yubuchobap are sold at Korean and Japanese grocery stores. You may find them in Asian grocery stores, too. Ingredients (for 2 servings): 2 cups of cooked rice (made with 1 cup of short grain rice), yubuchobap kit, cucumber, carrot, salt, yellow pickled radish, vegetable oil, and canned black olives (for spooky eyes). See my site for pictures and descriptions of ingredients: www.maangchi.com Directions: 1. Chop cucumber and carrot into small pieces, about 1/3 cup worth. Put it into a bowl. 2. Add a pinch of salt and mix well. Squeeze out any excess water 10 minutes later. 3. In a heated pan, add a drop of vegetable oil and saute the squeezed vegetables for 20 seconds. 4. Chop yellow pickled radish into small pieces, about 2 tbs worth. 5. Make 2 cups of rice and put it into a large bowl. 6. Add the vinegar-based sauce to the warm rice. Mix it well with a wooden spoon. *tip: I suggest not pouring all the sauce from the packet into the rice. Add it little by little until you reach your preferred taste. 7. Add the prepared vegetables and chopped yellow pickled radish to the rice. Mix it well and cool it down. 8. Open the package of yubu and squeeze it slightly to drain out the extra sauce. 9. How to make these 2 delicious sidedishes. Check the recipe here at www.maangchi.com Kkaennip kimchi Ingredients: Perilla leaves (135 grams: about 3 cups), 3 tbs fish sauce, ¼ cup of onion, 4 cloves of garlic, 2 stalks of green onion, 1 ts honey , 1-2 tbs hot pepper flakes, roasted sesame seeds, carrot (2 tbs) Directions: 1.Wash and drain 135 grams (about 3 cups) of perilla leaves and put them into a basket. *tip: wash both sides of each leaf in running cold water and shake to drain water 2. Next, let's make kimchi paste! Put these ingredients in a bowl and mix them together with spoon: 4 cloves minced garlic, 2 chopped green onions, ¼ cup amount of sliced onion, 2 tbs of carrot cut into matchsticks, 3 tbs fish sauce, 1 -2 tbs hot pepper flakes, 1 ts honey. 3. Spread some paste between the leaves. *tip: You don't need to put paste on every leave but every 2 leaves Now you made kkaennip kimchi! Gratz! : ) Put the kimchi in a container and keep it in the refrigerator. Serve with rice and sprinkle some roasted sesame seeds before serving. Kkaennip jangajji (Korean style perilla leaves pickles) Ingredients: 1 pound of Perilla leaves (about 450 grams), soy sauce (1½ cup), a medium size apple, 1 medium size onion, 4-5 cloves of garlic, 1 cup water, 2 jalapeno pepper, 1 tbs of sliced ginger. Directions: 1. Wash and drain 1 pound of perilla leaves and put them into a basket. *tip: Wash the both sides of each leaf in runny cold water and shake it to drain water 2. "Korean-style collard greens side dish" Ingredients: 1 pound of collard greens, salt, garlic, onion, dried anchovies, soybean paste, and water. Directions: 1. Boil water in a large pot. 2. Cut off the top tough part of the collard greens, and arrange the leaves side by side stems parts and leaf parts. 3. Add a handful of salt to the boiling water. 4. Put the collard greens stem-first in boiling water and cook for 1 minute. 5. Submerge the collard greens in the water by pressing them down with a wooden spoon. 6. Close the lid and cook for 3 minutes. 7. Drain the collard greens and rinse them in cold water a couple of times. 8. Drain the water and chop the leaves into small pieces. 9. Put them in a wok or cooking pot. 10. Add 3 cloves of minced garlic, 7 large dried anchovies (after heads and guts are removed), ¼ cup of soybean paste, ¼ cup chopped onion, and 1 ½ cup water. 11. Ingredients: 2 bunches of yeolmu (young summer radish), salt, flour, fish sauce, sugar, garlic, ginger, onion,green chili pepper, red chili pepper, and water. How to handle yeolmu: 1. Add some salt (½ cup) and mix it with hands. Let it sit in the salt for 30 minutes. 5. 30 minutes later, turn it over to salt evenly and let it sit another 30 minutes (total salting takes 1 hour). 6. Wash the salted yeolmu 3 times and drain in a colander. Make paste: 1. In a small pot, mix 1 tbs flour and 1 cup of water and heat it over medium heat. 2. Keep stirring until the liquid thickens. When you see some bubbles, it means the porridge is cooked well. 3. Add 1 tbs sugar (optional) and ½ cup of fish sauce (you can replace fish sauce with 1/4 cup salt). 4. Turn off the heat and cool it down. Make yeolmu mulkimchi: 1. Get a big stainless steel bowl. 2. Slice half an onion, ginger (½ tbs), 2-3 red chili peppers, and 2-3 green chili peppers , 4 cloves of minced garlic, and put them into the bowl. 3. Thank you for watching Korean Cuisine with Anna Kim! Today we are making a Korean Rice Cake Soup called Duk Gook. It is traditionally served on New Years! Today Is the Korean New Year! Ingredients: - 1 Package of Rice Cake - 1/2 Pound of Beef - 3 Tbsp of Soup Soy Sauce (You can get this at a korean store) - 1 tsp of Garlic - 1 tsp of Sesame Oil - 2 Eggs - 1 sheet of Dried Seaweed - 2 pieces of Green Onion - 6 Cups of Water - Slice Beef thinly - Cook Beef and add 6 cups of water - Bring to boil - While waiting for water to boil, roast seaweed for 1 minute in the oven at 400 degrees. - Whisk 2 eggs together and cook. - Add Rice Cake to soup and boil for 10 minutes or until soft. - Slice egg thinly, slice green onions, and crush seaweed. - Garnish and serve! When I feel lazy, I always make this because it's the quickest to make. lol. You can add a fried egg on top or also add any meat to it if you like. Sometimes I like to add spam.. yummy! lol. Ingredients: - 2~3 cups of kimchi (diced and save the liquid) - 1 medium carrot (diced/ optional) - 2~3 TBSP extra virgin olive oil or use any oil you like - 2~3 cups cooked rice - salt dice up kimchi and carrot. save kimchi liquid. heat up a large pan on medium heat and add 2 TBSP of olive oil. add kimchi and carrots and cook for about 3-5 minutes. add cooked riced and 2 TBSP of the kimchi liquid. mix well. cook for about 2-3 minutes. add salt to taste. enjoy! twitter.com
