Ingredients: 1. 1 cup of ground pork 2. 2 cups of ground beef 3. 2 cups of chopped boo chu (Asian chives) 4. 4-5 soaked Shiitake mushrooms 5. half onion 6. half package of tofu 7. 3 cloves of minced garlic 8. salt 9. sugar 10. sesame oil 11. vegetable oil 12. fish sauce 13. egg 14. green onion 15. mandu skins (60 discs) Make filling: 1. Place 1 cup of ground pork and 2 cups of ground beef into a big bowl. 2. Add 1 ts of salt, 1 tbs of sesame oil, ½ ts of ground pepper and mix it by hand and push the mixture of meat on the side of the bowl. 3. Wash asian chives (bu chu), dry well with paper towel or cotton cloth and then chop them to make 2 cups. Add 1 tbs of oil and mix it up. Place it in the big bowl next to the ground meat. tip: oil will coat vegetables so that liquid would not come out from it 4. Chop 4-5 soaked shiitake mushrooms and half an onion and put it into a small bowl. 5. Add 1 ts of soy sauce, 1 ts of sugar, and 2 ts of sesame oil the small bowl in the last step. Mix it by hand and then transfer it to the big bowl. 6. Squeeze half a package of tofu using cotton cloth or paper towel and put it into a small bowl. In this video, Betty demonstrates how to make one of the desserts of her dinner train ride--Old Fashioned Apple Dumplings. This dish is a hearty dessert, with each serving being an entire apple, filled with butter and spices, and encased in pastry. The apples are then baked in syrup until the syrup is thickened and the pastry is browned and flaky. Wonderful!!! Ingredients: 1 recipe pastry for a double-crust pie, made into dough 4 large Granny Smith apples, peeled and cored (Don't core all of the way through the apple, just most of the way toward the bottom.) 6 tablespoons butter, divided into 4 single tablespoons and an additional 2-tablespoon cube, softened to room temperature ½ cup light brown sugar 1 teaspoon ground cinnamon ½ teaspoon ground nutmeg 2 cups water 1 1/3 cups white sugar 1 teaspoon vanilla extract vanilla ice cream or whipped topping (optional) Butter a deep dish pie plate (or other appropriate baking dish) and set aside. Chicken and Dumplings: Feel free to substitute any ingredients you wish, and increase/decrease amounts for the size of your family! 4 boneless/skinless chicken breasts 2 tablespoons of butter 1 (10.75 oz) can of cream of chicken soup 1 (10.75 oz) can of cream of celery soup 3 1/2 cups of chicken broth 1 onion, finely diced 1 cup celery, diced 1 cup carrots, diced Chicken boullion seasoning or cube salt & pepper *As for the dumplings... A delicious way to make chicken and dumplings when you don't have time to make them the old fashioned way. This is easy and takes very little time to put in the Crock Pot to have a wonderful dinner. Crock Pot Chicken and Dumplings 2 Tablespoons butter 2 cans cream of chicken soup 1 can chicken broth ½ onion, diced 1 Tablespoon dried parsley, or 1 teaspoon dried dill Salt and pepper to taste 3-4 boneless, skinless chicken breasts A can of refrigerated buttermilk biscuits Some extra chicken broth, if needed to reach your desired consistency after adding biscuits Put everything, but the biscuits into the Crock Pot and cook on high for 5 hours. In the second episode of Danwei Canteen, Anhui native Li Zhongqin cooks her mother's egg dumpling recipe, set to music from Anhui. Video also on Youtube and Tudou. See below for recipe. # Chop up as a piece of meat as finely as possible. Using a meat grinder or buying minced meat will make the job much easier. # Add a small bit of ginger, a spoon of soy sauce and a spoon of starch to the meat paste. # Break an egg and separate the yolk from the white. Add the egg white in the meat paste and whisk it until they are thoroughly combined. Break another four eggs into a bowl and whisk them (for) exactly 100 times. # Heat up a ladle over the cooking flame and then pour some salad oil into it. Tilt the ladle around so that it is fully covered with a thin film of oil. Drain the remaining oil back to the container. Add a spoon of whisked egg into the ladle and tilt until fully covered. When the egg becomes a stiff sheet, add the filling on top. Fold the sheet and mate the two ends. Make as many as you like in the same way. # Steam the dumplings for 15mins in a steamer. # At the same time, put some soy sauce, chicken extract, salt, vinegar and sugar into a bowl and mix them together. Heat up some oil in a wok. Add the spices into the oil, then fry and add water. Sprinkle the sauce and some chopped green onion onto the steamed dumplings. Now the egg dumplings are ready to eat.
