In this recipe I use chicken breasts, and because chicken breast meat tends to dry in the cooking process, I love to marinade it. This marinade will make the most succulent chicken breast you can imagine. Since the marinade is like a cocktail, you never know how much you'll need. You have to have enough to cover the meat. So for marinade I'll talk ratios and not quantities. 4 chicken breasts (you can use more or less, use as much as you need) Marinade 1 part vinegar 1 part wine or beer 1 part soy sauce 1 part any vegetable oil, you can use extra virgin olive oil or any other oil you like. 1 part water -------------------------------------------------------------------------------- 1. I use plastic bags for marinating the meat. Put chicken breasts in the plastic bag. 2. Pour the marinade ingredients straight over the meat, close the bag and shake it well. 3. Leave meat to marinate for 10-60 minutes outside or up to 12 hours inside the fridge, and then you can BBQ it. 4. BBQ the meat, it takes about 4-5 minutes aside. Sprinkle with salt and pepper. Try not to flip the meat too much, and please, please, please don't overcook the meat. Ingredients: 2 1/2 pounds uncooked chicken breasts, cut to individual serving sizes meat tenderizer, to taste 1 inner packet of Ritz crackers, finely crushed 3/4 cup grated Parmesan cheese 2 tablespoons fresh chopped parsley 1 stick of butter or margarine, melted cooking oil spray fresh ground black pepper, to taste Use kitchen shears to remove any excess fat from your chicken breasts. Now, sprinkle them lightly with meat tenderizer, top and bottom. All you need to do for this recipe is lightly season your chicken breasts and pour some French Dressing over them and take them to the grill! This great and easy entrée was given to me by my hair stylist, Donnie Lee Philpot, who has beauty shops in London, Kentucky and Richmond, Kentucky. Thanks for a wonderful recipe, Donnie Lee! In this video, Betty describes how she makes her delectable Southern Oven-Fried Chicken recipe. It is crispy and delicious and very easy to make! Ingredients: 2 pounds uncooked chicken breast meat (cut to make 4 equal-sized breast pieces) meat tenderizer to taste 1 cup of flour (for dredging) ground black pepper to taste 3 tablespoons cooking oil With kitchen shears, cut off all excess fat, tendons, and gristle from the uncooked chicken and discard. Divide the 2 pounds of chicken into 4 equal-sized pieces. Sprinkle meat tenderizer (which takes the place of salt) on the top and bottom of each piece of chicken. Pour 3 tablespoons of peanut oil into and iron (or similar) skillet, and begin to heat it. (Watch it carefully, so that it doesn't smoke or burn.) Meanwhile, place 1 cup of flour in a zip-lock bag and place each piece of chicken (one-at-a-time), shake to coat the chicken with the flour, and place each piece of chicken into the hot peanut oil. When each piece is brown on the bottom, turn it, until all four pieces are turned. Immediately move the skillet of chicken to an oven that has been preheated to 400 degrees, and place the skillet on the center rack. Cook for about 25 minutes, or until done to your desired crispness. Remove the skillet from the oven and place it back on the cooktop. Ingredients: 2 pounds uncooked chicken breast, trimmed of fat, and cut into fairly equally-sized pieces meat tenderizer—No MSG (or salt), to taste freshly ground black pepper, to taste extra virgin olive oil (to coat the uncooked chicken) barbecue sauce of your choice (I used KC Masterpiece Original.) Homemade sauce will be great! Place cleaned, uncooked chicken pieces in a shallow dish. Sprinkle both sides with meat tenderizer (or salt), to taste. Grind black peppercorns over both sides, to taste. Spread both sides generously with extra virgin olive oil. Cover the top and the bottom of your broiling pan with aluminum foil, for an easy clean-up. In this video, Betty demonstrates how to make nutritious and Hearty Chicken and Wild Rice Skillet. It is quick and easy to make, with chicken breasts, packaged fast-cooking rice mixture, and some cream of mushroom soup. It looks elegant, and it is very tasty! Ingredients: 1 1/3 cups milk 10 ¾-oz. can condensed cream of mushroom soup (You may use any cream soup.) 6-oz. package fast-cooking long grain and wild rice (including the seasoning packet) 4 boneless, skinless chicken breast halves, cleaned of any excess fat and gristle 1 tablespoon peanut oil In a medium saucepan, combine 1 1/3 cups mile, a 10 ¾-oz. can cream of mushroom soup, and a 6-oz. long grain and wild rice mix, with seasoning packet. Stir until all ingredients are well-mixed. Set aside. Place 1 tablespoon peanut oil in a medium to large skillet, and heat over medium-high heat. Place 4 chicken breasts halves in the hot peanut oil and cook for 5 minutes on each side. Temporarily remove browned chicken breasts to a plate with paper toweling while you pour off excess fat from skillet. Return the chicken breasts to the skillet, and pour the rice mixture over them. Bring to a boil. Cover, and reduce heat to low. Simmer for about 15 minutes, or until chicken is done and liquid is absorbed. This is a wholesome entrée, made in a healthy way. In this video, Betty demonstrates how to make her impressive Baked Chicken breasts with Sour Cream Gravy recipe. This chicken is slow-baked in the oven and is lusciously tender with a mushroom-sour cream gravy that is tangy and as smooth as silk! Ingredients: 2.5 pounds chicken breasts (I came out with 10 fairly evenly-sized serving pieces.) 2.25 oz. jar of dried beef or sliced deli ham (I used the dried beef, but only 10 half circles of it.) 1 pint (16 oz.) sour cream 10 3/4 oz.can condensed cream of mushroom soup 5 or 6 slices of bacon, mostly cooked oil spray for baking dish Trim all excess fat and gristle from the chicken breasts, and then cut them into pieces that can be rolled up. If your pieces are thick and hard to roll, try pounding them flat with a mallet or hammer covered with aluminum foil. Place 1 or 2 half rounds of dried beef, or an appropriate amount of sliced ham on top of an uncooked chicken breast. Roll the chicken breast, until it encompasses the filling. Close with a toothpick, and place in an 8-inch by 10-inch baking dish that has been sprayed with cooking spray. Continue until you have used up all your chicken breasts and filling. now, make your gravy. Combine 1 pint of sour cream and a 10 3/4 oz. can condensed cream of mushroom soup. Stir until the two ingredients are completely blended. Pour the mushroom-sour cream gravy over the top of the individual chicken rolls that are in your baking dish.
