Super easy and quick dessert, so quick that you can make breakfast while they bake! :) Pâte à Choux: 1/2 C butter 1 C water 1 C flour 1/4 t salt 4 eggs Vanilla Custard Filling: 2 (136g) pkgs vanilla pudding mix 2 C heavy whipping cream 1 C milk Preheat oven to 425, set the rack in the middle In a large pot, bring the water and butter to a rolling boil. Stir in the salt and flour all at once until the mixture forms a ball. Transfer the dough to a large mixing bowl. Beat in the eggs one at a time (don 't worry if your dough begins to look as if it's curdled!), mix well after each. Drop by tablespoonsfuls (or use a pastry bag) onto an ungreased baking sheet. Lightly press down any tips that have formed on the dough (dip your fingers in water to make it easier) Bake for 20-25 mins (MAKE SURE IT DOES NOT BURN!), until golden brown. The centre should be dry When the puffs are cooled, you can fill it with a pastry bag, or cut the tops off and fill it. Try different filling if you like, perhaps use a flavoured whip cream instead of custard. ORRR try a savoury version! Dust some cocoa powder or powdered sugar and garnish with some mint. If you want you can make a croque-en-bouche!
