
Gluten-free cheesecake made with ricotta, so fairly low in fat too. You can use higher fat cream cheese and digestive biscuits /graham crackers/gingernuts - whatever. Ingredients 1 packets of biscuits (gluten free digestives, normal digestives, graham crackers etc) 250 grams cream cheese (ricotta, mascarpone, philadelphia or any other cream cheese you want to use) 50 grams Sour Cream 2 tablespoons sugar 2/3 tsp cornflour 1 egg Handful of sultanas (optional) 1 lemon or two tablespoons lemon juice ready squeezed Vanilla essence Large knob of butter (1 to 2 oz - or whatever that is in grams - I have no idea!) You also need 1 7/8 inch sandwich tin, or the lid of a pyrex dish Foil A mixer a bowl An oven!
