Obsessives - Knives

Joel Bukiewicz loves grinding steel. Hes the man behind Cut Brooklyn, making high-end knives to order for chefs and home cooks. Bukiewicz found that honing metal was more satisfying than honing his novel, but as with many writers and their characters, Bukiewicz remembers details about every knife hes made. The video takes you through the knife-making process and addresses common questions, like how many knives do you need, whats up with Santokus, and what is the best knife to own.

Forks Over Knives

What has happened to us? Despite the most advanced medical technology in the world, we are sicker than ever by nearly every measure. Two out of every three of us are overweight. Cases of diabetes are exploding, especially amongst our younger population. About half of us are taking at least one prescription drug. Major medical operations have become routine, helping to drive health care costs to astronomical levels. Heart disease, cancer and stroke are the country's three leading causes of death, even though billions are spent each year to "battle" these very conditions. Millions suffer from a host of other degenerative diseases. Could it be there's a single solution to all of these problems? A solution so comprehensive but so utterly straightforward, that it's mind-boggling that more of us haven't taken it seriously? FORKS OVER KNIVES examines the profound claim that most, if not all, of the so-called "diseases of affluence" that afflict us can be controlled, or even reversed, by rejecting our present menu of animal-based and processed foods. The major storyline in the film traces the personal journeys of a pair of pioneering yet under-appreciated researchers, Dr. T. Colin Campbell and Dr. Caldwell Esselstyn.

SHUN KNIVES by KERSHAW

SHUN KNIVES by KERSHAW Preferred by chefs worldwide, Shun by Kershaw is kitchen cutlery for the ultimate knife connoisseur. With exceptionally good looks as well as razor-sharp cutting performance, these Shun knives by Kershaw have deep traditional roots. Manufactured in the famous samurai sword-making center of Seki City Japan, 700 Years of tradition has brought Kershaw cutlery to the edge of perfection. Shun Classic is a stunningly beautiful line of cutlery featuring the look and benefits of Damascus steel, yet without its rusting problems. The Damascus-look blade profile reduces sticking and results in less damage to the food being cut and faster prep times. The forged steel blade of the Shun knife is clad with 16 layers of high-carbon stainless steel and holds an incredibly sharp edge longer for easier edge maintenance. The Shun Pro line features the design preferred by professional Japanese Chefs - a one-sided, beveled edge with a hollow-ground back. The single bevel design means an incredibly sharp edge that's easy to maintain. Further, the hollow-ground back creates an air pocket between the blade and the food being cut. The result is less sticking to the blade and less friction damage to the food. The stainless steel bolster of the Shun knife is a unique offset design that enhances ergonomic qualities for the highest level of safety and control. The Shun series of kitchen knives feature a unique "D" shaped PakkaWood handle which provides both function and beauty ...

Neck Knife Kit

Years ago I set up my Newt Livesay NRGS neck knife as a PSK. I have found the concept of the neck knife PSK to be very useful. In this video I show the contents of the kit and discuss some of my reasoning behind the items I include. I've had a few requests for a written list of the kit contents... The rubber is bicycle inner tube cut to length. This rubber also serves as emergency tinder if need be. SHELTER - Seven strand Paracord & handle wrap, Needle and waxed line for clothing repair. This kit is light on shelter resources, but it is a small kit. FIRE - BSA Hotspark, Cotton treated with Vaseline, 2 birthday candles, inner tube rubber. WATER - Two 10 oz milk bags, 20 mg Potassium Permanganate. This would only allow me to treat 20 oz of water at a time and it takes a half hour to treat water with KMnO4. At a water source that would translate into 40 oz an hour which is good enough. SIGNALS - Day/Night Mirror, LED Light, Fire/Smoke, Whistle NAVIGATION - 20 mm Button Compass FOOD - #4 waxed line for snares, traps, or fishing. I give food a very low priority in small survival kits, its just not a killer. You can make a similar kit around many different neck knives. The Becker BK-11 or RAT Izula would be good candidates if you can't find an NRGS. Make your kit what you need it to be for your area and needs. These contents have worked for me for many years from Alaska to Brazil and points in between.

The major storyline traces the journeys of Dr. T. Colin Campbell, a nutritional biochemist from Cornell University, and Dr. Caldwell Esselstyn, a former top surgeon at the Cleveland Clinic. The idea of food as medicine is put to the test. Throughout the film, cameras follow "reality patients" who have chronic conditions from heart disease to diabetes. Elite Shun Knife Review

Hey everybody, Steve Shue here for another addition of the Shun Knife Review. Okay, today we're going to be talking about the highest quality of the Shun Knives which is the Elite Shun Knife. Yeah, I know... the name kinda gives it away, but these knives are the elite of the elite. In the last episode we talked about the Classic Shun Knife which is the most popular, but the Shun Elite is the second most popular. They are very similar in most aspects, but there are a few distinctions I'd like to point out. First, the steel. If you'll remember in the last episode we mentioned that the Classic Shun is made of a VG-10 steel. However, the Elite is made of a higher premium grade of steel called SG-2. This is probably the most important and distinct difference between the two. SG-2 is a premium "powdered" alloy. As you may know, powdered steels are created thru a unique process that allows a uniform distribution of elements throughout the material. This creates a steel that can be made EXETREMELY hard and, therefore, wicked sharp. In all seriousness, they are the sharpest of all knives... in my opinion... period. Nothing compares. The SG-2 powdered steel is hardened to 64-66 Rockwell whereas most kitchen knives use steel that has a Rockwell hardness of 56-58. The steel is evenly blended, eliminating weak spots or soft spots or any other imperfections for that matter. The knife is then clad with stainless steel to provide strength, and flexibility and corrosion protection... not ...

Glock Field Knives: Much knife, little money

It's a rare occasion to get more knife than you've paid for. But you will with a Glock knife. A descendant of a knife-sized bayonet, the Glock knifes inherit the narrow blade profile that was primarily designed for the thrust attack. However it is also effective for camp shores, digging, opening things, food preparation, and wood splitting. The spring steel blade does need to be re-profiled to bring out a sharp edge though. Once that's done, the Glock knives are excellent field companions. The upside to that narrow blade and the strong polymer used is its amazingly svelte 9.0 oz total weight. That makes it a good choice for backpacking trips. This 6.5" spring steel blade holds an edge adequately, is tough, and easy to sharpen. The downside to the narrow blade with its long straight edge (low mass) is that it does not chop well. You can't have it all at this weight. The sheath is superb: light, tough, locks into belt well with a great QD belt clip, and the retention clip is VERY secure (but usually needs two hands to extract). At a price of $25 to $30 these Glock knives offer incredible utility, performance, and quality. It 'sa reliable field companion, great collector knife, or car trunk survival knife.

"Why Big Knives Don't Suck" by Nutnfancy

Often misunderstood and untested by their armchair critics, large fixed blade knives serve impressively in certain roles. In this Nutnfancy Philosophy of Use video, the use of large fixed blades knives is explored. The focus is on wilderness use and how such tools excel in high altitude alpine environments when size and carry weight issues (SAWC) are considered. Contrasted against axe use, the large survival knife is usually safer and is more forgiving in stability bases (deep snow) when splitting wood. Several proven blades like the Ontario RTAK II, Cold Steel Trailmaster, the KaBar Heavy Bowie, the Ontario SP10 Marine Raider, and Ontario SP50 are referenced and shown. These knives are much proven in many hours of video form here in TNP as they tackle these woodscrafting tasks to include fire and shelter making. The axe possess certain disadvantages that dissuaded their use in my wilderness "stage:" usually has to be more specialized in its constructions for these jobs, it gets stuck in logs, and the large ones needed for effective large log are much heavier to pack in. A big blade can cut a 10" log in two with effective batoning. As such it can be a time saver when you are already tired from the steep hike in and succumbing to the effects of fatigue (less dexterity). Is this the time to have a specialized woods tool requiring special technique and skill? Hardly. Instead in most wilderness POUs the large blades minimize work and get your fires started faster, your ...

Deer hunting knives #47 / Farid custom & Bark River Bravo1

a) We have 700 thousand deer on Hokkaido island while a real deer hunter's population is 2 thousands. So 350 deer are assigned to a single deer hunter. The hunter's population is getting less year by year because of the peace education at school and the very strict gun control law. So the deer population is increasing 100 thousand a year and it will reach a million soon. The deer is the main reason for traffic accidents in countryside and for agricultural and forestry loss which is estimated 70 million dollars a year. So the provincial government made a special anti deer department this year. b) I get 70 deer a season. If I got 20kg meat from a deer, the total amount of the meat will go 1400 kg. We are not allowed to bring it to a market due to the food sanitary law. We have very few stations where we can throw the carcas away. At least in my hunting areas there is no station. So we regularly leave it there or bring it to mountains. c) Hunting is a kind of sports for me. I keep my body lean to move fast in hunting. The season continues for 6 months. So it occupies a decent part of my life. I don't get amazed or keyed up when I meet a big stag at all. I can stay cool headed in hunting and its mentality is useful in my ordinary life too. Hunters from the main land are different. Their heart must be beating when they meet a deer even if it is a small doe. It's because they have little chance to meet a deer in the main land and they come to Hokkaido just once a year paying ...

Wolverine Survival Knife Review custom machete

Meet the Wolverine. My answer to the Tom Brown Tracker and the Woodman's Pal. Both are very nice tools, but cost too much. Since making this video I've purchased a Cold Steel Barong Machete. It's way better than the Wolverine. The Wolverine was fun to make though. So I bought a $6 parang machete, cut the handle off to bring the blade to just over 9", added a finger groove for finer work, and added my own wood handle. The result is a machorty (short machete), that is lighter, safer and more nimble than a full size machete. The sheath is made from 55 gallon food grade barrel plastic. I riveted it together and added some velcro and a pouch. The pouch holds a fire striker, a Gerber Clutch multi tool and a Speedy carbide sharpener. The knife has tested very well, and I'm very pleased with the design. It will most likely replace my hatchet. Stay tuned for more videos in the future of me using the Wolverine.

Knife Steel

If you've taken the time to properly use a knife, then you're going to want to take the time to properly use a knife steel. Chef Jason Hill demonstrates how to use a knife steel. First you want to get a firm grip on the handle and make sure your thumb and finger are tucked underneath the guard. Next, hold the steel out from your body at about a 45 degree angle. Take the knife and place the heel of the blade at the tip of the steel. Come off and down the steel at a 20 degree angle. Go to the other side and repeat. Come all the way down. Do this about 10 times each side. The more you practice, the faster you'll get. Some people place the steel onto a secure surface with the steel on a cloth and the handle held secure. They may think this is safer that holding it in your hand, but that's why you have a guard. What the steel does to the knife blade is it hones it. It basically straightens it out. You have microscopic teeth on your knife blade, and when you use it often, they become a little warped. The steel straightens it out and gives you a better cutting edge. Knife steels are sold separately, or they come in a knife set. I recommended a nice mid ranged price knife steel for your home. And if you use your knife on a daily basis, you're going to want to use your knife steel on a daily basis.
