This video shows how to make a fruit cake. This cake recipe for a fruit cake would be ideal for a birthday cake or wedding cake. More details on this fruit cake recipe can be found at www.cookeryskills.com This fruit cake recipe requires you to line an 8 inch cake tin with greaseproof paper (double thickness). See www.youtube.com for how to do this. The ingredients for this rich fruit cake for an 8 inch round cake tin are as follows: 350g plain flour 10g mixed spice 110g ground almonds 6 eggs (medium) 250g soft dark brown sugar 250g butter 1kg dried mixed fruit (currants, sultanas, raisins) 50g mixed peel 125g glace cherries 1 lemon 1 orange 250ml dark rum (optional) If you want to make a special cake for that special occasion, such as a Birthday or Wedding, make it a few weeks in advance and add a touch more rum from time to time. The cake will improve even more over several weeks. A good dark rum has been used in this recipe but you can of course use a good brandy.

Betty's Christmas Fruitcake -- Family Favorite!

In this video, Betty demonstrates how to make Christmas Fruitcake. This recipe is a tradition in my family, and my sister, Barbara, makes it every year. It is much better that pre-packaged fruitcakes, and I think you will love the combination of Christmas-y flavors! Ingredients: 1 lb. pitted dates, chopped 1 lb. pecans, chopped ¼ lb. red, candied cherries, chopped ¼ lb. green, candied cherries, chopped ½ lb. candied, sliced pineapple, chopped 1 cup sugar 1 cup self-rising flour 1 teaspoon ground nutmeg 1 teaspoon vanilla extract 4 eggs, well-beaten Combine dates, pecans, cherries, and pineapple in a large mixing bowl; set aside. Combine dry ingredients; add to fruit mixture, stirring well. Stir in eggs and vanilla. Spoon batter into a buttered and floured 10-inch tube pan. Bake at 250 degrees (F) for about 1 hour and 45 minutes to 2 hours, or until a wooden pick inserted into the center of the cake comes out clean. Cool cake completely in pan. Remove, and place on a nice cake plate. Slice into ½-inch slices to serve. (It is very rich.) Note: Cake may be baked in 2 buttered and floured standard loaf pans at 250 degrees (F) for 1 hour and 20 minutes, or until wooden pick inserted comes out clean. You may think you are not fond of fruitcake, but I think this recipe will convince you that it is a great tradition for the holidays. In this video, Betty demonstrates how to make Christmas Fruitcake Cookies. These cookies will allow you to have the flavor of fruitcake without the trouble! You will notice that some of the measures below are either tiny or unusual amounts. The original recipe was 4 times as large, so I divided each ingredient by 4, and this made medium-sized cookies for me. If you want the original recipe, just multiply every ingredient by 4. Ingredients: 4 ounces candied pineapple, chopped 2 ounces red candied cherries, chopped 2 ounces green candied cherries, chopped ½ cup golden raisins 1 cup chopped pecans ¼ cup flour for dredging 5/8 cup flour for batter 2 tablespoons butter (I used 1 tablespoon butter, which turned out fine, if you want to cut down on fat.) ¼ cup light brown sugar, firmly packed 1 egg, separated 1 teaspoon baking soda 1 tablespoon milk ½ ounce brandy (optional) ¼ teaspoon cinnamon ¼ teaspoon nutmeg cooking oil spray In a medium-sized bowl, combine candied pineapple, red candied cherries, green candied cherries, golden raisins, and chopped pecans. Dredge with ¼ cup flour and set aside. Cream butter and brown sugar together. Add egg yolk, beating well. Dissolved baking soda in milk and add to creamed mixture. Add brandy, cinnamon, and nutmeg, and the remaining 5/8 cup flour, mixing well. In a small bowl, beat egg white until stiff, but not dry. Fold beaten egg white into batter. THERMAL PORTABLE COOKER FRUIT CAKE

INGREDIENTS 1 1/2 cups mixed dried fruit 1 teaspoon Soda Bicarb 3/4 cup boiling water 1 Tablespoon Butter 1/2 cup brown sugar 1 egg 1 cup of Self Raising Flour 1 cup of all purpose (plain) Flour 1 teaspoon of allspice or cinnamon 1 teaspoon of vanilla essence 1. Grease a tin that fits the Pot and line base with baking paper. 2. Sprinkle the soda bicarb over the fruit and pour on boiling water. 3. Add the butter and sugar and mix till it melts. 4. Add a well beaten egg. 5. Add in the flour and spice and lastly the vanilla essence 6. Spoon into the tin. 7. Cover with a sheet of baking paper and Alfoil, make a pleat in the centre to allow for expansion. 8. Place on a trivet in the inner pot and pour in enough hot water to come 2/3rd the way up the sides of the cake tin. 9. Bring to the boil and then simmer for 25 minutes. 10. Place the inner pot in the outer vacuum container, close the lid and leave for at least 2 hours. I left mine for 4. As my tin was a tight fit I made baking paper strips to lower the cake tin into the pot. Take care if you use these you dont hang them down where they might catch on fire.
