Even if we only have one avocado and some salt in the house, my younger sister and I will find a way to turn that into guacamole - we're just that wild about it! This classic Tex Mex dish is like a chunky salad of fresh vegetables that all boost the verdant green avocados, and it's always the first thing to disappear at ANY event I take it to. Fresh lemons and limes are crucial! Guacamole (serves 4) 3 ripe Haas avocados 1 tablespoon freshly squeezed lemon juice 1 tablespoon freshly squeezed lime juice 2 tablespoons finely diced red onion 1 garlic clove, minced 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 4-8 dashes Tabasco sauce (optional) 1/2 small vine-ripened tomato, seeded and diced 1 tablespoon minced fresh cilantro Yellow corn chips (for serving) Working around the seed, cut the avocados in half. Remove the seeds from the avocados. Using either a spoon or your fingers, remove and discard the skins from the avocados, and place the avocado flesh into a medium bowl. Pour the lemon juice and lime juice over the avocados and toss throughly, making sure that all sides have contact with the citrus - this ensures the guacamole will be vibrantly green. Add the red onion, garlic, salt, pepper and Tabasco sauce, if using. Run your knife through the vegetables to combine all of the ingredients and chop down the avocados. In this episode I not only show you how to make guacamole (no tomatoes), but I interview Matt Timms - creator of the Chili Takedown, Bacon Takedown and the upcoming Avocado Takedown in Los Angeles! Guacamole INGREDIENTS • 2 Hass avocados or 1 Fuerte • 1 lime (about 2 tablespoons of lime juice) • 1 jalapeno or serrano pepper, minced (seeded for less heat) • 1 cup minced cilantro • 1 clove garlic, minced • 1/2 teaspoon salt INSTRUCTIONS Hold the avocado in your palm, caressing it. Use a sharp knife to cut around it, longitudinally, to create two symmetrical halves. Twist the halves apart and use your knife to knock the pit out of whatever half it is stuck in.
