How to Grill Salmon Perfectly


Grilling salmon perfectly isn't easy. You must first catch some salmon, preferably from Alaska (fresh Alaskan salmon is the best, right?), then you must get ready to eat. Heat up the grill (really hot), spray lots of non-stick spray (lots, I said), then put the salmon on skin side up. Cook it that way for two minutes, flip it, slather the fish with sauce, cook it for five more minutes, then slide it off the grill (without the skin) onto your waiting plate and eat it up. Make sure you have lots of nice vegetables and don't make some nasty sauce. Olive oil and butter is a good sauce. Some spices will help too.

"Ridiculously Easy Roasted Asparagus" Food Tip of the Week


Slim stalks of asparagus just scream of spring. Blanching or steaming has long been the cooking method of choice for these tender spears, though all that moisture can leach out the bright green color and make asparagus stringy, even mushy. Roasting or grilling asparagus concentrates the sweet, green-ness of the vegetable and adds a crispy, caramelized crunch that makes it irresistible. Toss the spears with olive oil, salt and pepper and roast in a 400-degree oven for 15 to 20 minutes, or until the stalks are just tender and have taken on a rich, caramel brown in places (don't fear the browning, this makes it delicious). If you're grilling, just toss the oiled and seasoned spears onto a pre-heated grill -- just be sure to use a grill basket, or some careful tong-work, to prevent the spears from slipping between the grate. Sprinkle the hot spears with a little balsamic vinegar or serve plain. You'll never go back to steaming.

They look like a banana in shape but have firm, thicker skin, noticeable seams, longer length, and a pale yellow or slightly pink interior with a starchier texture. Starchy taste resembles, to an extent, that of a potato. The green (or raw) plantain is considered a staple vegetable throughout the Caribbean (tropics), Latin America, and Asia. How to make plantains -- there are many ways. One example as seen in this video is to fry 'em...I mean...fried platano or fried plantain. They are fried twice. The second time is to get a beautiful toasty look and crunchy taste. The cooked plantain are called "tostones." You can purchase this vegetable in the fresh produce sections at grocery stores or markets. Plantains are also classified as fruit when ripe. When ripe the plantain (amarillos or maduros) is in the middle stage of the fruit. The interior is yellow, and skin has a yellow color or even yellow with brownish-black spots. The "maduros" or "amarillos" have a slighly sweet, banana-like flavor with a firm texture. When they have darker skin, the taste is sweeter (simply delicious) and texture is softer.
