This time, I am saying SAKE for 清酒[seishu] which is the most popular/typical/well known. ^^ And the meanings of 清酒[seishu] and 純米酒[junmaishu] are... 清酒[Seishu] is kind a category for 大吟醸酒[Daiginjo shu], 吟醸酒[Ginjo-shu], 純米酒[junmai-shu], 本醸酒[honjou-shu]. Among them, Daiginjo-shu,Ginjou-shu, Honjou-shu has some additives for taste better/milder. While, Junmai-shu doesn't have any additives and just made from only rice, malt and water.

Actua-Dolce met Ivan Sabbe


In deze aflevering is Ivan Sabbe, ondernemer en Vlaams parlementslid voor LDD, de centrale gast in Actua-Dolce. Samen met gastronoom Ilse Duponcheel verkent hij de Japanse keuken. Samen kiezen ze voor een gewaagde combinatie van de Japanse keuken met westerse elementen. Als aperitief serveert Ilse een warme organische saké (Mutemuka junmai nama genshu shize) en een koude sake (Diago no shizuku junmai shizenshu). Daarbij wordt tofu geserveerd, verrijkt met een mix van wasabikruiden (kemeya original), geconfijt kerselaarblad, kleine champignons en shizo op wijnazijn. Het voorgerecht is een miso soep, een gevulde Japanse schelp met shuzo waka en noedels. Als hoofdgerecht een tepanyaki met Wagyu vlees en zout, begeleid met Iki bier.
