Be sure to post your food pictures at facebook.com Here is the recipe: Ingredients: 5 cups of berries 1 lemon, using half of the juice ½ cup of granulated sugar Recipe: 1. Combine the berries, lemon juice and sugar in a sauce pan. Mix with a wooden spoon to release the juice from the berries. 2. Turn the burner to a medium-high heat. Let cook 18 minutes, or until thick, stirring occasionally to prevent the jam from burning or sticking. 3. Once thickened, remove from heat and let stand about 10 minutes. 4. After the jam has cooled a bit, transfer into mason jars or screw-top plastic ware.

How to can fish / smelt


This is a brief overview of how I can my smelt. Recipe per PINT: 2 tbsp of Virgin Olive Oil 2 tbsp of Water 1 1/2 tsp of Liquid Smoke 1/2 tbsp of Vinegar OPTION: Replace liquid smoke with 1 tbsp (per pint) Dijon mustard Cut recipe in 1/2 for half pints Brine smelt in 1 cup canning salt for every gallon of water used, brine for at least an hour Cook both 1/2 pints and pints 100 minutes at 10 psi, but adjust for altitude (see your manual) All canners are different, so read your manual Good Luck!!!!

How to Prepare and Can Pineapple Jam National Can-It-Forward Day!


Greetings, in this last installment for my contribution of National Can-it-forward day I am going to share with you all, one more time how I make my blue ribbon winning pineapple jam. This has won me a blue ribbon the last two years in the Craven County Fair and I am very proud of that. This Jam is super simple requiring few ingredients so that makes it a perfect jam for a first time canner! It makes a wonderful delicious jam that can easily be used on ice cream or pound cake for a layered dessert or trifle or a great banana split! I hope that today has encouraged all of you to get into canning even just a little bit. Start small and work your way up, you will be so glad you did. I will not kid you, it is hard work, but so well worth the effort when you can open up your home canned goods and serve them to your family knowing exacting how it was made and what went into it. Weck Canning Jar


Weck jars are unique in such that the lids do not screw closed but are held on by the original suction that occurs as the contents cool and the air inside the jars contract, and by a couple of steel clips that fasten around the top edge. When I first saw these cool looking jars I was at a place in Sausalito (just north of San Francisco) called Heath Ceramics (I think there's another location in Los Angeles). I liked them so much that I bought a few in various sizes and tried them out. Naturally they came without instructions so I treated then as I would any other Mason, Kerr, or Bormioli Rocco jar. Basically, I removed the clips and pried open the lids with a butter knife. I was admiring the cool looking design of the Weck jar one day and realized that if I were to just pull on the tab I would release the seal and prevent ever damaging the rubber gasket with a knife. I was thrilled when I first opened a jar of jam this way and want to share this info with others as clueless as myself. The jars can be had online from Heath Ceramics at www.heathceramics.com . They have a pretty complete selection. They are kinda pricy but shipping is free if you order $75 or more. There's also a Heath outlet at the Ferry Building in San Francisco that seems to carry a sufficient quantity of quite a few of the sizes. Please tell me how you like these if you have tried them out or when you do.

How to Make Pickled Green Beans with Karen Solomon


Karen Solomon, author of JAM IT, PICKLE IT, CURE IT demonstrates how to make easy and delicious pickled green beans. The recipe can be used for all kinds of vegetables, including cucumbers, carrots, cauliflower, and more! Recipe: (Makes 3 jars) PREP AHEAD: Youll need 3 clean pint jars with lids. You can buy canning jars with vacuum-seal lids (look for Ball or Kerr brand jars), or you can reuse jars from your pantry. 3 pounds green beans, stems intact, washed and dried 9 cloves garlic, crushed 3 cinnamon sticks 3 bay leaves 3 tablespoons yellow mustard seeds 3 tablespoons brown mustard seeds 6 tablespoons dill seeds 3 tablespoons black peppercorns 6 teaspoons kosher salt 1 1/2 to 2 1/4 cups distilled white vinegar Add one-third of the green beans, garlic, spices, and salt to each jar. Fill each jar halfway with vinegar (about 1/2 to 3/4 cups). Top off each jar with cool water. Seal each jar with a lid, and shake gently to dissolve the salt and distribute the spices. Refrigerate for at least 3 days.

I used Kerr half pint jars to fill Ingredients 6 1/2 cups powdered milk 1 (5 ounce) package non-instant chocolate pudding mix 1 cup powdered chocolate drink mix 1/2 cup powdered non-dairy creamer 1/2 cup confectioners' sugar 1/2 cup unsweetened cocoa powder Directions 1.In a large bowl, combine powdered milk, chocolate pudding mix, chocolate drink mix powder, creamer, confectioners' sugar, and cocoa. Divide the mixture between two 1 quart jars. 2. Seal, and decorate as desired. These can be stored in a dry area for up to 3 months. 3. You can also add cinammon, chocolate chips, nutmeg, whatever you like to it too. This is a simple, hot chocolate mix because I let people add what they like! 4.Attach a tag with the following instructions: Hot Cocoa: Dissolve 1/3 cup cocoa mix in 1 cup boiling water.

Pickels the Second Time This Year


I don't know why I have not had issues with this in the past. But last time I water bath canned, I had 1 jar fail, this time I had 2 jars fail. I think the error in my ways is I am not putting the jars into the water bath canner when the water is warm but not totally boiling. Next go around I will place the jars in the water bath canner while the water is still warm in the water bath canner, but not boiling. I will start my processing time once the water reaches a rolling boil. (I think this will be a better method, and is probably more correct). Feel free to let me know what else I might be doing wrong.

Strawberry Freezer Jam 'How-to'

This basic recipe can be used with any fruit. Makes about 5 x 250 ml jars. 4 cups (1000 ml) crushed strawberries, about 2 quarts (2 L) 1 -1 cups (375 ml) granulated sugar 1 pouch (45 g) BERNARDIN® Freezer Jam Pectin Wash and rinse 5 BERNARDIN® Freezer Jars and lids or 250 ml mason jars and closures. Wash, hull and crush strawberries, one layer at a time. Measure 4 cups (1000 ml). In a large mixing bowl, combine Freezer Jam Pectin and sugar or SPLENDA® until well blended. Stir fruit mixture into pectin-sugar mixture; stir 3 minutes. Ladle jam into jars, leaving 1/2 inch (1 cm) headspace. Wipe jar rims removing any residue. Apply lids tightly. Country Comes Home Concert recorded live in Castleblayney (One of the first country shows held in Iontas) A fund-raiser organised by Tony Loughman 2007 The renowned musician and singer's recording of 'The Merry Ploughboy' went straight to number 1 in the Irish Charts in 1966. Dermot also hosted his own television programmes, including 'The Dermot O'Brien Show' on RTÉ television and his talents as an accordion player were respected the world over. He also had a great love of the Irish language and his All Ireland winning speech in 1957 was delivered primarily in the native tongue. With his Clubmen, he toured the Irish and English ballroom circuit in the sixties, before moving into cabaret in the 70's and 80's. Dermot joined the renowned Jury's Irish Cabaret in 1995 and spent six happy years performing with them in Dublin and on their US tours. After the 2000 season, Dermot left to pursue his solo career. He spent the summers performing in Ireland, after which he returned to his home base in New York. Most recently, Dermot toured the US in 2002 with a very successful Christmas Tour featuring himself and Deirdre Reilly. Dermot is also well know as Louth's 1957 All-Ireland winning captain. A member of the St Mary's club in Ardee, he won three Louth Senior Football championship medals in 1951, 1956 and 1960 and also played for one year with Navan O Mahony's. Home canning Ball Jar Canning Lids - not sealing NEW BOX


This season, I first noticed a problem with the new Ball jar lids (silver) after 4 jars out of 4 batches didn't seal. After opening new boxes, and comparing things to the older gold colored seals, i noticed that the "pop" the lid usually makes, is barely there, or doesn't exist!! This is compromising our food safety. Ball Jar no longer manufactures canning supplies. Jarden Home Products distributes under the Ball name. Where are these made? There's a fuzzy Made in the USA on the front, but i'm suspect. Maybe the box was made in the USA.. The older boxes with gold lids hada red white and blue big flag with made in the USA. I am going to be VERY cautious with this product if i use it at all. Home preserving requires skill, knowledge to safely produce food for us.

As a caged bird, cockatiels are second only in popularity to the Budgerigar.The cockatiel is the only member of the genus Nymphicus. It was previously considered a crested parrot or small cockatoo; however, more recent molecular studies have assigned it to the Cockatoo subfamily Calyptorhynchinae (commonly known as Dark Cockatoos). It is, therefore, now classified as the smallest of the Cacatuidae (Cockatoo family). Cockatiels are native to the outback regions of inland Australia, and favour the Australian wetlands, scrublands, and bush lands. Distinction of sexes: a hen's cheek-spot is paler than a male's. How to keep it: it needs not large space, it can be kept in a cage, but if possible let it fly in a room daily. It is not a frail animal. Update to the original system. I am using a more robust container to hold the net pot, in this case it is a Kerr wide mouth jar, it offers a more substantial base and weight. Supplies: I got the rubber grommets from cableorganizer.com, they have a huge selection of sizes choose on appropriate for your hose and hole. Glass drill was from e-bay, there are some affordable diamond plated glass drill bits there. CAution!
