Greetings! Happy New Year! I hope that the holidays were good to you and for you. I hope that you start this new year renewed and refreshed. Today I found this video that I had done a while ago and forgot about. So here it is for your culinary enjoyment! With the weather being what it is for so many of us, cold and blustery, in NC a hint of snow in the south east, but nothing to sneeze at. So here is something to warm your body and soul. Manhattan Style Clam Chowder. This is a really good pantry meal, you already have most of what you need in your house anyway. Well, I always keep canned clams on hand and use them for this recipe as well as a killer red clam sauce for pasta, I will do that some time too! Here is what you need to make this lovely soup: 2 cans chopped baby clams (reserve the juice) 2 additional cups of water mixed with the reserved clam juice 2 cans diced tomatoes 1 medium onion diced 4 strips bacon diced 3 cups potatoes diced 1/2 cup chopped celery 1/2 cup chopped green pepper 1/2 cup diced carrot 1 tablespoon fresh thyme or 1 teaspoon dried thyme 2 tablespoons fresh chopped parsley or 1 tablespoon dried parsley In a large heavy bottomed pot, sautee' bacon until browned and add onion, celery, carrots, green peppers and sautee until onions are translucent and other veggies begin to soften. Add tomatoes, clam juice and water mixture, thyme, parsley and potatoes, give it a good stir and heat to simmer. Continue to simmer until potatoes are soft but not <b>...</b>
