Hand Dough Kneading French Method

Simon demonstrates a traditional French method of hand kneading dough. Simon wanted a well developed (but not oxidised) dough. I think the final dough was suitable, particularly as this was a quick demonstration with no time for a bulk proof. A 10 min rest may have cut 5 minutes off the start. Coarser milled flours benefit more from a rest (the flour in this dough was fine roller milled, baker's). Crumb of the final bread was quite creamy, definitely not over-kneaded. Best No Knead Bread recipe

This is my version of Jim Lahey's (Sullivan Street Bakery) No-Knead Bread Recipe. It doesn't have the huge holes in the finished loaf as pictured in some of the 18 hour rise recipes but I find it delicious, easier to cleanup and make! I replaced the plastic lid handle of the Le Creuset dutch oven I use with a stainless steel drawer pull to avoid having it crack or melt in the high heat of the oven. The oiled parchment paper saves on cleanup and prevents any sticking problems. Please use this recipe as a starting point and customize it as you like. 3 cups bread flour ¼ teaspoon instant yeast ¼ teaspoon red wine vinegar 2-3 teaspoons salt 1 1/2 cups warm water 1. In a large bowl combine flour and salt. Add ¼ teaspoon instant yeast and ¼ teaspoon red wine vinegar to 1 1/2 cups warm water.Combine wet and dry ingredients together until all moisture is absorbed. Cover and allow to rest for 4 hours. 2. Uncover bowl and fold dough over on itself a couple of times. Place dough in the center of a sheet of oiled parchment paper. Rinse the bowl with water. Return the dough in parchment paper to the bowl.Cover and let rest one hour. 3. Preheat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot (cast iron, dutch oven, Pyrex or ceramic) in oven as it heats. Carefully remove pot from oven. Place parchment paper and dough into heated pot. Cover with lid. Cut away excess parchment paper and bake 30 minutes, then remove lid and bake another 12 to15 minutes until loaf is browned <b>...</b>

Have you ever tried to make homemade bread? This ciabatta bread is a fragrant no-knead bread, that needs just a pinch of yeast and a long rising time, for a great result! *** Would you like a fragrant homemade bread with the least effort? Today we'll prepare it together by mixing only the ingredients and letting them rise for 18 hours with just a pinch of yeast. In this way, the bread doesn't need to be kneaded before baking. But let's see together what ingredients we'll need: • 4 ¾ cups (600 g) of flour • ¼ tsp (1 g) of active dry yeast • 1 tsp of malt (or 1 tsp of honey or sugar) • 2 ½ tsp (15 g) of salt • about 2 cups (500 ml) of water • 2 tbsp of cornmeal • extra virgin olive oil Let's make together the no-knead ciabatta bread: Begin by sifting the flour over a large bowl; now add the dry active yeast and the water, where salt and malt have been dissolved. After adding all the liquid, mix just enough to blend the ingredients. And here is the resulting dough. With a spatula, remove the remains of dough, then cover with cling film... and let it rise for at least 18 hours at room temperature, that is at no more than 75°F (24°C). This is how the dough looks after 18 hours of rising time, as you can see it's full of air bubbles and very sticky. Now spray a little water on the worktop... and cover with a piece of cling film, where we'll shape our ciabatta bread. In this way, the cling film will stick to the worktop without moving. Found this one in a Taste Of Home "Church Suppers" magazine. I make a half recipe (one loaf) in video, this is the original recipe: 2 packages active dry yeast 3/4 cup warm water 3 cups shredded cheddar cheese 3/4 cup shredded Parmesan cheesea 2 cups milk 3 tbsp sugar 1 tbsp butter melted 2 tsp salt 6 to 6 1/2 cups all purpose flour 1 egg white beaten 1 tbsp water Topping: 1/2 cup finely shredded cheddar cheese 1 garlic clove minced 1/2 tsp sesame seeds 1/2 tsp poppy seeds 1/2 tsp paprika 1/4 tsp celery seed -In large bowl dissolve yeast in water, add the cheeses, milk, sugar, butter, salt and 3 cups of flour. Beat by hand or mixer about 3 minutes. Stir in enough remaining flour to make a firm dough. -Do no knead, cover and let rise in warm place until doubled, about 1-2 hours -Stir dough down, transfer to two greased loaf pans. Cover and let rise until doubled about 30 minutes. -In small bowl combine egg white and water. In another bowl combine topping ingredients. Brush loaves with egg white/water mixture, sprinkle with topping, bake at 375F for 25-30 minutes or until golden brown. Remove from pans and place on wire rack to cool.

No Knead Bread is something that everyone should try at home. The aroma of baking bread wafting through your home is fantastic! In a large bowl combine flour, yeast and salt. Add 1½ cups water, and stir(about 15-20 seconds) until combined. Cover bowl with plastic wrap. Let dough rest 18 hours, or at least 12 hours. 2. Dough is ready when its surface is dotted with bubbles. Lightly flour a work surface and place dough on it; sprinkle it with a little more flour and fold it over on itself once or twice. Cover loosely with plastic wrap and let rest about 15 minutes. 3. Using just enough flour to keep dough from sticking to work surface or to your fingers, gently and quickly shape dough into a ball. Generously coat a cotton towel (not terry cloth) with flour, wheat bran or cornmeal; put dough seam side down on towel and dust with more flour, bran or cornmeal. Cover with another cotton towel and let rise for about 2 hours. 4. At least a half-hour before dough is ready, heat oven to 450 degrees. Cha Cha Dave's bakery: Bread Recipes. All Natural and as always no preservatives. Cha Cha Dave: 2000 Year Old Bread • No Knead Bread • Crunchy Crust-Chewy Inside • You will need: • 3 Cups White Flour • 1/2 Cup Oat Meal - For Dusting • 1/4 Cup Cracked Wheat - For Dusting (Optional) • 1 Tea Spoon Yeast • 1 Pinch Salt • 1-3/4 Cups Water • 1 Large bowl • 1 Dutch oven or cast iron pan with lid. • Preparation: • Put flour, yeast, salt into bowl. Stir to mix. Add water and mix together to moisten dry ingredients. Do not over mix. Lumps are fine. • Cover bowl with plastic wrap and let rest for 18 - 24 hours room temperature. • Put Dutch oven in the oven with top. • Preheat oven to 500 Degrees. Dutch oven should steaming hot. • Put oat meal and cracked wheat on cutting board surface..spread around. • Pull dough out of bowl and pour onto oat meal and cracked wheat. (It will be stringy. Fold over (in half) and then again and roll into oat meal and cracked wheat to coat on all sides. • When oven reaches 500 degrees, open door and with a pot holder take off lid. Take dough and drop into dutch oven and place cover on. Bake for 35 minutes. If darker crust is desired, take off cover and leave in oven additional 8 to 10 minutes longer. • Cool on wire rack. Slice and enjoy! • Bread will last 5 to 6 days @ room temperature in a plastic bag.
