Goats produce approximately 2% of the world's total annual milk supply.Doe milk naturally has small, well-emulsified fat globules, which means the cream remains suspended in the milk, instead of rising to the top, as in raw cow milk; therefore, it does not need to be homogenized. Indeed, if the milk is going to be used to make cheese it is recommended that it is not homogenized as this changes the structure of the milk impacting the culture's ability to coagulate the milk and the final quality and yield of cheese. Dairy goats in their prime, which is generally around the third or fourth lactation cycle, average 6 to 8 pounds (2.7 to 3.6 kg) of milk production daily (roughly 3 to 4 US quarts (2.7 to 3.6 liters)) during a ten-month lactation, producing more just after freshening and gradually dropping in production toward the end of their lactation. The milk generally averages 3.5 percent butterfat.

((This is a reposted video that is now better quality.) Since we have not yet completed our straw bale milking barn, we are milking out in the open air at our new mountain home. Morning milkings are exceptionally peaceful, filled with sounds of the country and the calming effect of the cows themselves. We made a three part video of a morning milking with our two cows, Phoebe and Pezra, to share such an enjoyable experience with others.

Changes are rapidly occurring in the village and this series is an attempt to record these changes before a whole way of life is lost. Written and produced by Andrew Norris. The lowing of a cow can be heard at various times throughout the day and when it's heard at one house a corresponding reply echos across the valley from one of the few remaining households where a cow is still maintained. It has a melancholic ring as if the animal itself is lamenting the decline in the number of livestock in the village. It can still be remembered how every house would keep a cow and how it would be taken out to graze. These days, however, the cow remains in the barn and several times a day feed is brought to the animal instead. But Bara can still remember some of the songs she would sing as a child as she led the cattle to pasture, it is a style of singing that is rarely heard today. At our end of the village there remain just four cows. And whether one is watching Bara, or Angelka or Marica at work the technique of milking has remained unchanged for centuries and it is particularly satisfying to hear the sound of warm milk splashing into a pail. Quantities of milk vary but a few litres daily is usually sufficient for a family's needs for drinking or for making into cheese. But one does wonder for how long the <b>...</b>

this is our milking set-up..copied from another dairy.. we made a few changes and feel this is almost the perfect system...moves them fast and easy and no chance to pass eachother on the deck..single file is now the rule! it takes little effort other than making sure they fully enter each stall. smaller goats dont always engage the gate fully, so following along ensures there are no traffic accidents! they learn fast not to back up and some choose to jump off the back deck rather than walk the full length. we are plotting an auto-feeding system and hope to soon have that installed... milking alone and filling all 34 boxes takes up a lot of time.

Milking Operations at Bonnie View Farm, Craftsbury Cmn, VT, Oct. 2010
Bonnieview Farm is a sheep dairy located in the Northeast Kingdom of Vermont, and has been in the Urie family for four generations. The farm is a mixture of rolling pasture, hay fields, and woods, where Neil, Kristin, Tressa Urie and the triplets live and farm. We milk 180 ewes from May to October while they are on pasture, and make three kinds of cheese with the milk. We raise lambs for meat, and make various products with their wool, including yarn, wool duvets and felt slippers, and we also sell individual fleeces to spinners. We sell our products at farmers' markets, local stores and restaurants, through some local distributors and mail order gift boxes in the fall. In addition to the sheep, we have a breeding pair of pigs, a flock of laying hens, two cows, a llama, a dog and a cat. Our cheese has been sold at Formaggio's Kitchen in Boston, MA, Saxelby Cheesemongers, Murray's Cheese Shop and Artisinal in NYC, and was featured recently in the December issue of the Brown Alumnae magazine.
