For Pani Puri - Ready made pack of Puris Pani Puri masala mix packet 1 onion finley chopped Sev 500g Chickpeas and Potatos boiled & mashed for stuffing puris Chutneys - Green chutney (see my "Green Coriander Chutney" video) Sweet chutney made of Dates (khajur) deseeded. Soak 5 dates in water for 1/2 hour and than crush them with hand or grind them and use that paste as chutney (add more grated jaggery (gur) if needed while grinding).

Pani poori is an spicy snack .. under the category of "chaat" .. it is a small crisp poori which is stuffed with a suitable curry and filled with tamarind chutney and eaten.. here is how it is made: take 6 measures of soji, one measure of maida, one measure of wheat flour, a little salt to taste and make a thick dough with water.. allow to set for about half an hour.. then make out a large roti, cut with a cup / lid cap into small disks as shown and deep fry in cooking oil.. cool ( for sometimes upto 5 to 6 hrs in the open ) and then crack one face of the poori ( it will remain crisp ) stuff with a potato curry, fill with a tamarind chutney and EAT !

Pani Puri : An Authentic street snack in India
Pani Puri is a very popular street snack and can be found anywhere in India - be it in the big cities or in the small villages. Sized like a golfball, it's actually a hollow, crispy bread. The chaatwallah (snack-seller) picks up a golfball-sized puri, sticks his thumb in it to make a hole and then fills the "bowl" up with ladles of tangy liquids. There will also be some mint, some chickpeas, and some potato and onion. The exact fillings vary by seller and by region, but one common taste is that of tamarind pulp, making the mess sweet and tangy. A plate of this snack costs abt 10 rupees and comes with 6 to 10 mini balls. I raised the white flag at # 4 but the vendor went "One more! One more!" It was a messy affair, weird...but definitely enriching. I walked away smiling and rubbing my belly :)
