Growing & Forcing Rhubarb


As rhubarb is likely to be in one position for many years, ground preparation is very important. Plenty of organic matter in the form of garden compost or rotted manure should be worked into the soil and base of planting hole.It's also time to cover any clumps of rhubarb outside that you want to force into early growth. I'm using a terracotta forcing pot, but an old bin or large bucket can be used. The idea is to exclude light from the new shoots which forces them to grow tall and light pink in colour. Depending on the weather, it will be around 6-8 weeks until we can harvest.

Katzcradul demonstrates how to make 'Rhubarb Strawberry Jam'. Below is the recipe from Pickyourown.org. with only slight modifications Liquid pectin was used rather than dry. If you are going to use dry, go to their website for specific instruction. Dry pectin is added earlier, and cooked longer. RHUBARB STRAWBERRY JAM 4 cups crushed strawberries 2 cups cooked rhubarb (about 2# rhubarb chopped and cooked in 1/4 cup water) 4-6 1/2 cups sugar (how much depends on tartness of your fruit) 1 pouch liquid pectin Combine cooked rhubarb, crushed strawberries, and sugar together in a large pot. Cook over medium heat. Skim foam off if desired. Stir until mixture reaches a rolling boil. Add pectin and boil for 1 minute. Remove from heat and cool for 2 minutes. Ladle into jars that have been sterilized. Wipe rims with a damp paper towel. Screw on hot lids and bands. Process in boiling water bath for 10 minutes. Let cool for 24 hours before disturbing. Rhubarb is easy to grow and needs very little care. It is a heavy feeder so composting and fertilizer are recommended. Rhubarb is a perennial. Red and green varieties are available. Rhubarb should be harvested by mid June in order not to stress the plant before it goes begins to go dormant for the winter. Next rhubarb harvest: Ginger Rhubarb Jam!

In ancient Mesopotamia, people liked to eat fried fish with vinegar-based sauces. This rhubarb and tahini sauce is both tart and slightly sweet. Recipe: This dish is reminiscent of Medieval Baghdadi cuisine, with its combination of sweet and sour. 2 filets of fresh trout or shad 2 T olive oil 2 T chopped shallot 1 small clove of garlic, very finely minced 1 fresh stalk of rhubarb, thinly sliced 2 T white wine vinegar 1 tsp. ground coriander Pinch of ground cumin ¼ cup tahini 1 tsp. pomegranate molasses (or honey) Garnish: chopped mint and parsley Preheat the oven to 375 F. Gently rinse the filets and pat them dry. Season well with salt. Place them on an oiled baking tray and pour some olive oil on top as well. Place in the oven for about 15-20 minutes, or until the thickest part gently flakes when poked with a fork. In a small sauté pan, heat up the olive oil. Gently sweat the shallot until translucent, and add in the garlic. Add the rhubarb to the pan and stir. Pour in the vinegar, adding in a tablespoon or so of water if needed, and cook the rhubarb through until it breaks down and becomes mushy. Add the coriander and season with salt. Once the rhubarb is completely cooked through, pour in the tahini, stirring well or whisking, to homogenize the sauce. Season with the cumin, and pomegranate molasses (or honey if you do not have <b>...</b>

This recipe comes to us courtesy of Natascha Franklin, the chef at the Duke of Cambridge pub in London. Ingredients The filling 1 Kg Rhubarb 200 to 300 g sugar (depending on how sweet you like the dessert.) 1 Orange 1 Tsp Ginger Preparation: Wash and cut the rhubarb stalks into two to three centimeter wide pieces and place them in a pot. Sweeten the rhubarb to taste then add the juice from the orange and ginger. Slowly heat the fruit mass over a low flame. After ten to fifteen minues it should be soft with small, firm pieces of rhubarb throughout. Finished! For the Crust 300 g Flour 200 g Butter 100 g Sugar 1 tsp Ginger ½ tsp Cinnamon Method: Mix the ingredients into a bowl and knead until the dough is firm and crumbly. Then generously fill several small bowls with the fruit mass and lay the crust over it. Important! Do not press down the crust! The proportion of fruit mass to crust is unimportant. If you prefer more fruit, simply use more; if you prefer more crust, simple lay a thicker piece over the fruit mass. Then set the bowls in an oven preheated to 180 degrees Celcius and bake for fifteen minutes if the bowls are small. (You can bake larger bowls for up to thirty minutes.) The crumble is finished when the crust is baked to a golden-brown color and the juice from the fruit mass begins to bubble. If you make too much fruit mass or crust, you can simply freeze it or keep it in the refrigerator for a few days. Then simply heat it back up! Vanilla Custard: -500 ml Cream <b>...</b>

www.gaurk.com Rhubarb was lovingly and painstakingly handcrafted in about five months time. I started the project back in May 2007, and worked on it until the end of August 2007, at which point I ran out of patience. As the beginning of September rolled by, I stopped working on the film entirely. By this time, I had roughly two and a half minutes of footage, and no clue how to continue the story line. I let the film sit for a little less than a year before sketching out the second half of the story board. At the end of April 2008, I got my ideas onto paper, and cranked out the final three minutes and ten seconds of footage in about four weeks. In the end, 170 8.5 x 11 in. drawings were used to make the film, along with a dozen Sharpie markers. The original track that played during the film was "Rhubarb" by Aphex Twin. I do not own that song, nor did I get permission to use it, and therefore I had to replace that track with a song called "The Molten Core" off of an album called Aalborg Soundtracks Vol. 1.

What's for Dessert? Strawberry Rhubarb Crisp


Greetings! Its strawberry time around here, hopefully in your neck of the woods as well. And if its strawberry time, it has to be rhubarb time too! So last week I spend my Sunday cooking up 6 batches of strawberry jam, strawberry pineapple jam and strawberry rhubarb jam, 42 jars in all, now we are set for a long time with jam with plenty to share with friends and family. But alas, I had one entire flat of strawberries left, this week we ate some, I made shortcake and I decided to use the remainder in a strawberry rhubarb crisp before the berries had to become compost (I hate wasting). If you have never had rhubarb, give it a try, it is sour/tart and is very complimentary with the Strawberries, but remember, if you pick your own out in the wild, dont eat the leave, they contain a toxin that will make you sick. Cut them off out in the field and leave them for the wildlife. Here is what you will need to make this dessert: 1 cup and 1 pint of strawberries quartered 3 ½ to 4 cups rhubarb (this is what I had leftover from the jam) 1 cup sugar ¼ cup cornstarch Topping: 1 Cup Wheat Flour ( I use white wheat flour from King Arthur) 1 Cup Old Fashioned Oats 1 Cup Packed Brown Sugar (light or dark, your choice) ¼ teaspoon Salt 1 Stick Butter that has been cubed In a 9 x 13 baking dish place strawberries, rhubarb, sugar and cornstarch, toss to combine.
