Christmas Dinner Recipe: Roast Turkey - There's no doubt that cooking a big turkey is a challenge for most domestic cooks. Keeping the breast moist while still making sure the rest of the bird is properly cooked is not easy. So why not make the whole thing easier on yourself by getting a turkey crown, available in most supermarkets these days. Main Ingredients * 1 crown turkey * 2 packets of bacon * 2 whole celeries * 2 leeks (make sure they are washed) * Root ginger * Salt and Pepper Ingredients for Five Spice Butter * 1 block of soft butter * 2 tsp Chinese five spice powder Method 1. Combine ingredients for five spice butter. 2. Place turkey in roasting tin on top of the whole celeries and leeks. 3. Rub turkey crown with fresh root ginger. 4. Peel back the skin and spread the five spice butter between the flesh and skin. 5. Stuff the turkey and season with salt and pepper. 6. Cover with bacon. 7. Stick a meat thermometer in the thickest part of the turkey. 8. Wrap in a tinfoil tent. 9. Place in oven at 220°C for 30 minutes then remove and baste. 10. In this video, Betty demonstrates how to make a Thanksgiving Roast Turkey. This is a 12-pound frozen turkey, thawed in the refrigerator for 4 days, prepared with butter and salt, and then roasted in a covered roasting pan in the oven for 4 hours. During the last hour of roasting, the turkey is basted with its own juice occasionally. During the last half hour of roasting, the lid of the roasting pan is removed, to brown off the turkey. The turkey is done when a meat thermometer, inserted into the deepest part, reads 185 degrees. If you follow the instructions in this video, you will come out with a golden brown turkey with lots of delicious roast turkey and turkey stock for gravy for Thanksgiving Day! In this video, Betty demonstrates how to make Oven Roast Turkey Legs. These turkey legs are salted, and then roasted in a roasting pan in the oven for slightly more than an hour. This is an easy and convenient way to have roast turkey without going to a lot of trouble. Also, the turkey legs provide more flavor than the white meat portion of turkey. Ingredients: 2 turkey legs, about 1 pound each (You may use more, if you like.) Salt, to taste Wash the turkey legs and dry them with paper toweling. Salt the turkey legs, to taste, working the salt in with your hands. Place the turkey legs in a roasting pan and cover it with a lid. Roast the turkey legs in a 350-degree oven for slightly over an hour. Start checking for doneness after about an hour. The turkey legs are done when a meat thermometer reads 180 degrees. Remove turkey legs from the roasting pan and place on a platter or cutting board for slicing. Slice the meat from the turkey legs carefully, since there are quite a few bone shards in addition to the main turkey leg bone. Serve the sliced turkey leg meat on a nice platter. You can make wonderful fat-free turkey gravy from the juices in the roasting pan. The recipe is available in bettyskitchen. Ingredients turkey salt ground black pepper olive oil butcher's twine roasting pan Turkey defrosting times: 8-12 lbs will take 1-2 days. 12-16 lbs will take 2-3 days. Allow approximately 24 hours for every 5 lbs in a refrigerator set at 40 F. Instructions 1. Preheat the oven to 325 F. 2. First remove the giblets and neck from the cavity. You can reserve these parts for the gravy. 3. Rinse the turkey with cold running water and drain well. 4. Blot dry with paper towels. 5. Season the inside cavity with salt and pepper. 6. Fold the wings under the body, to prevent the tips from burning. 7. Tie the legs together with butcher string. 8. Fold the neck skin and fasten it to the back with a skewer. 9. Drizzle the outside of the turkey with extra virgin olive oil. 10. Season generously with salt and pepper. 11. Place the turkey, breast side up, on a rack in a large, shallow roasting pan no more than 2.5 inches deep. 12. Insert an oven-safe thermometer into thickest part of the thigh, being careful it does not touch the bone. 13. Roast the turkey about 3-1/2 hours depending on the weight. 14. Frequently baste the turkey with the pan juices. 15. Continue to roast until the thermometer registers 165 degrees F. 16. Remove the turkey from the oven and allow the bird to rest for 15-20 minutes before carving.

Here are my guidelines: DO get a turkey thats big enough to serve everyone! Figure one pound per guest, then add a pound or two for leftovers if you like. DO get a fresh turkey if possible. Turkeys labeled fresh are held under refrigeration at 26 degrees. While that is below the freezing point of water, its not cold enough to freeze the bird. Frozen turkeys are flash-frozen to -30 degrees then held at zero degrees. A frozen turkey may be drier than a fresh turkey, depending on how long its been frozen. And a frozen turkey will require up to 3 days in your refrigerator to thaw completely. For those reasons, I recommend sticking with a fresh turkey. DO bring your turkey to room temperature before roasting by leaving it on the counter for one hour before cooking. A turkey that is still icy on the inside when it goes in the oven will prove to be a disaster later on, with an overcooked breast and undercooked thighs. DO remember how much your turkey weighs. In this video, Betty demonstrates how to make her Crock Roast Turkey Breast, and also how to make smooth, delicious, low-fat roast turkey gravy to go with it. Very tender turkey and super flavorful gravy! Ingredients: 3 lb. frozen turkey breast, thawed meat tenderizer (to taste) 1/3 cup cornstarch 2 cups water Thaw the turkey breast, if frozen. Use meat tenderizer to salt and tenderize the turkey to taste. Place the turkey breast in a crock pot and cook on low all day for a dinner meal (roughly 6 to 8 hours; larger turkey breasts may take 8 to 10 hours). When ready to serve, remove the cooked roast turkey breast to a tray or cutting board. Slice into desired serving pieces and place on a serving platter. Now, make your roast turkey gravy. From the juices that are left in the crock pot, spoon off as much fat and turkey slivers as you can, and then pour the juices into a saucepan. Mix together 1/3 cup cornstarch and 1 cup water, and add to the saucepan of juices. Stir thoroughly before putting the saucepan over heat. Now, move the saucepan to a burner on your cooktop. Roasting a Thanksgiving turkey can sometimes be a difficult affair. In this video, Williams-Sonoma culinary expert Amanda shows you how to take the guess work out of roasting a Thanksgiving turkey. In this video, Betty demonstrates how to make fat-free cream style gravy from the stock of her Christmas Roast Turkey Breast. This gravy is smooth and creamy, but is guilt-free, if you are watching calories! Ingredients: turkey stock from roast turkey breast (The amount of stock you have will depend on the size of turkey breast and your cooking procedure. You need to be flexible in making gravy from stock, so that it will be of perfect thickness and consistency.) 2 tablespoons flour (have more available for adjusting thickness) 1 cup skim milk Water, if needed for thinning gravy salt, if needed Spoon off all excess fat from the top of the turkey stock. Strain the stock, in order to remove scraps left from the roasting procedure. Place the stock in a medium-sized saucepan. Mix 2 tablespoons flour with 1 cup skim milk, and add to turkey stock. Bring to a boil over low heat, stirring constantly. Continue to boil and stir until gravy is thickened. When heating or cooking your gravy, you may find that it is too thick or too thin. To thin the gravy down, add water, a little at a time, and stir. To thicken gravy, mix some flour with a small amount of cold water, place a few tablespoons of hot gravy into the flour/water mixture and stir quickly. How To Cook Baked Turkey Wings with Creative Soul: Happy Thanksgiving!


My first time cooking in front a camera and trying hard to remember everything that I do when there's no camera! Anyway, Have a great Thanksgiving! ---------- Items: * Glass baking dish and aluminum foil Ingredients: * Turkey wings * Your favorite store brand seasoning or create your own! * 3 tsp. salt and pepper mixture * 2 tsp. garlic seasoning salt * 1/4 cup apple cider vinegar * 1/4 cup extra virgin olive oil I use Bragg Organic Apple Cider Vinegar as my cooking marinate, you can visit the site or find it in your local health food market: bragg.com Directions: 1. Preheat oven to 250 degrees. 2. Clean the turkey wings. 3. Mix salt, pepper, garlic seasoning salt and your favorite store brand seasoning mix together in a bowl and set aside. 4. Place turkey wings in glass dish. 5. Pour the extra virgin olive oil and apple cider vinegar over the turkey wings. 6. Season the turkey wings with the seasoning mixture. 7. Cover glass dish with aluminum foil and bake for 2 hours. Be sure to check on them every 30 minutes, you don't want them to over cook or maybe you do...it's all a matter of taste! 8. Cooking without stuffing reduces the cooking time thereby preventing the bird from drying out. Covering with butter, bacon and foil also helps lock in the flavours for a wonderfully rich, moist buttery turkey. It also produces juices that can be used to make a great gravy . The times quoted here are for a 4.5kg turkey. See below for other cooking times. SERVES: 6 (with some leftovers) TIME: 3 1/2 hrs + 45 min resting INGREDIENTS: 4.5kg / 10lb turkey 50g soft butter salt & pepper 15 rashers streaky bacon Large turkey foil Large heavy bottomed roasting tin 1. Preheat oven to 190c / 370f. 2. Remove giblets from a 4.5kg turkey then place in a large roasting tin. 3. Rub the butter all over the skin of the turkey. 4. Season well with ground black pepper. 5. Lay the bacon rashers over the turkey overlapping slightly. Cover both legs and breasts. 6. Wrap loosely in foil creating a tent for the turkey. 7. Cook for 1 hour. 8. Remove from oven, baste with any juices, recover and return to oven for 1 hour. 9. Baste again. Cook for a third hour. 10. Discard the foil, put the bacon to one side, baste well and cook uncovered for final 30 minutes to brown. 11. Using a meat thermometer, check the centre of the thickest part of the leg is at 80c / 180f, or if using a skewer, the juices run clear. 12.
