In this video, Betty demonstrates how to make a long-standing favorite in her family, Herbed-Seasoned Chicken Crunch. Made of chicken tenders, with a hint of mushroom flavor and herbed-seasoned dressing for coating, it's a real winner! Ingredients: 2 pounds fresh, uncooked chicken breast tenderloins (You may use half chicken breasts or nuggets.) meat tenderizer (no MSG), to taste freshly ground black pepper, to taste 14.75 oz. can condensed cream of mushroom soup 3/4 cup milk 1 tablespoon finely chopped onion 2 cups cornbread-style stuffing mix, crushed (I used plain cornbread-style; you may use plain or herb-seasoned-flavor.) 1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley) 1 1/2 tablespoons chopped fresh sage (or 1 1/2 teaspoons dried sage) 1/4 teaspoon paprika 2 tablespoons butter or margarine, melted coking oil spray Place 2 pounds washed, fresh chicken breast tenderloins in a medium-sized bowl. Sprinkle with meat tenderizer, to taste. Grind some fresh black pepper over the chicken, to taste. Use your hands to mix the chicken and seasoning, and then set aside. It provides a very refreshing summer meal that suits most people's tastes!!! Ingredients: 1 pound uncooked chicken breast chunks (Place your chicken in the freezer for a couple of hours, and then cut good-sized cubes with kitchen shears.) meat tenderizer, to taste 1 fresh pineapple, cut into chunks 1 container baby portabella mushrooms, cut in half if very large 1 large red bell pepper, cut in about 1-inch squares 1 cup extra virgin olive oil 1/4 cup soy sauce 1/4 cup light brown sugar Several hours before cooking your chicken kebabs, prepare your chicken chunks, vegetable/fruit chunks, and your brown sugar soy sauce marinade. Place your chicken chunks in a bowl, and set aside. Place your vegetable/fruit chunks (as much as desired) in a different bowl, reserving some for sauteing as a side dish, and set aside. Now prepare your Brown Sugar-Soy Sauce marinade. In a small bowl, mix together 1 cup olive oil, 1/4 cup soy sauce, and 1/4 cup brown sugar. Mix as well as you can, but you will probably need to use a funnel and transfer it to a clean jar with a lid, so that you can shake it to combine all ingredients. Ingredients: Lemon Marinated chicken ½ a Chicken Breast, flattened. Zest of 1 lemon. 3 tbsp of olive oil. Small pinch of salt and pepper to season For the Salsa One third of a small mango, peeled and chopped. One third of a red chilli, deseeded and chopped finely. ¼ of a red onion, chopped finely. 1 tbsp of olive oil. Small pinch of salt and pepper. For the pesto ½ a bag of both mint and coriander. ¼ tsp of very lazy garlic. Zest of ½ a lemon. 100 ml of olive oil. Salt and Pepper to season (I forgot to do this on the video, oops! You wouldn't believe the difference seasoning makes in this instance) ½ a tomato sliced. 2 slices of fresh baguette cut on the diagonal to make big slices (burger buns would be perfect here too!) A small bunch of lettuce leaves. Method Grate the zest of the lemon into a bowl with the olive oil and chicken breast and marinade for a few hours, or overnight if possible. Salsa:combine all the ingredients and mix well. Set aside. Pesto:If you have a food processor simply add all the ingredients and whizz together. If not, simply chop the herbs, add the zest, garlic and olive oil. Season well and mix together. This pesto will keep for up to 1 week in the fridge in an airtight container, covered in a thin film of olive oil. On a very high heat, fry the chicken for 3-4 minutes each side (only if the breast has been flattened, it will take sufficiently longer if not.) This is such a flavorful way to make chicken or any type of meat! I use these chicken legs on top of rice. Although it has unique spices on it, it is very simple to make. The seasoning does not have to be exact so it is easy to modify the recipe for more or less chicken. Also, the seasonings are salty so there is no need to add salt to the meat. Most of the seasonings can be found at the Hala shops, but the Sazon can be found in most local grocery stores. It is usually located in the Hispanic Food section. Also, if you can not find the Goya brand, there is a Knott brand that is powder. I recommend using about 1 tablespoon of the knott powder brand, although it will not make the chicken as yellowish-orange it will taste the same.

www.lightscameracook.com Recipe Serves 4 2 Foster Farms® chicken breast, sliced into cutlets Private Selection® Italian seasoning grinder, to taste 4 Tablespoons Private Selection® olive oil, separated 8 oz. sliced portabella mushrooms 1/2 Cup sliced white onion 3/4 Tablespoon chopped garlic 3/4 Cup marsala wine 1/4 Cup heavy cream 4 oz. Private Selection® penne pasta (cooked and drained). Fresh chopped parsley Shredded parmesan cheese, optional Heat a large skillet over medium-high heat for 2 minutes. In the meantime, season the Foster Farms® chicken with the Italian seasoning. Add one tablespoon of the oil to the skillet and swirl to coat well. Add the seasoned chicken and sauté for 1 minute per side. Remove the chicken from the pan and set aside. Return the same skillet to the heat and add the remaining 3 tablespoons oil. Add the mushrooms and sauté for 3 minutes. Add the onion and sauté for 2 minutes. Add the garlic and sauté for 30 seconds. Remove the skillet from the heat and add the marsala wine. Return the skillet to the heat and simmer until the marsala has reduced by 2/3rds. Add the cream and precooked drained pasta. Return the chicken to the pan and reduce the heat to low. Simmer for 4 minutes. Serve immediately and garnish with parsley and parmesan cheese.

www.lightscameracook.com Recipe Serves 4 • 4 Boneless skinless chicken breasts • Private Selection® Sea Salt and Peppercorn Medley Grinder • 2 Tablespoons unsalted butter • 2 Tablespoons olive oil • 1 can (14 oz.) quartered artichoke hearts • 1 Container fresh sliced mushrooms (8 oz.) • ½ Cup finely diced onion • 1/3 Cup all purpose flour • 1 Cup white wine • 1 Cup chicken broth • 1 Teaspoon dried rosemary (crushed) 1. On a cutting board, flatten chicken with a meat mallet to ½ in thick. Season chicken with the salt and pepper to taste. Heat a skillet over medium high heat for one minute. Add the butter and oil and swirl to coat. Add the seasoned chicken and bronze for 2 minutes per side. Continue to cook until center is done and juices run clear. Remove to serving platter and keep warm. 2. Cook mushrooms and onions in pan drippings; blend in flour, rosemary, salt and pepper until smooth. Slowly add wine and chicken stock; cook until thickened and bubbly. Add drained artichoke quarters and heat through. Remove sauce from heat and pour over chicken. Serves 4. I made some jerk chicken today. I still had some yellow rice leftover so I added it to the chicken. I probably over-seasoned the chicken. All I really needed was the Jerk seasoning. I'm on a quest to make the best jerk chicken in the world...I have a long way to go ;)

Stew chicken, dumplings and rice; 2kgs of chicken legs 1 level table spoon of the following each sprinkled on the chicken *all seasoning powder *paprika *black pepper *chicken seasoning *mild curry/madras powder *garlic powder or half a clove or whole clove your choice two onions, tinned tomatoes chopped or whole flour, water & salt for the dough to make dumplins, shallow fry seasoned chicken for ten minutes add the garlic, tomatoe and onion mixture then four cups of boiled water. add the dumplings to the boiling stew and turn the fire down and cover the pot for 1 & a half to two hours four cups of flour in a large bowl, two cups of water and two pinches of salt. roll into balls NB: if dumplings crack, add a little water, if too sticky, add a little more flour. Rice is simple i never measure, just pour rice in to a medium sized pot, boil water and pour JUST SO THAT the WATER is 1CM or HALF an inch above the rice. leave to boil for two mins with a pinch of salt then turn COMPLETELY DOWN & cover and leave for 15mins stiring half way cooked. serve rice on a plate and serve stew in a bowl. Lazy Man's Chicken Crumble


This has got to be one of the simplest recipes Jack has shown on the lazy man's series. Here is the recipe: **Preheat oven to 400F** YOU WILL NEED: * 4 frozen boneless and skinless chicken breasts (If your chicken is thawed, cooking time and temperature will be different. See below * 1 box/bag of seasoned croutons (choose a flavor! Garlic, ranch, italian... find these in the condiment aisle) * 1.5 cups of mayonnaise * salt-free seasoning blend. (I use "Mrs. Dash Table Blend". It's awesome.) * shaker of thyme (plus a fresh thyme sprig if you'd like a pretty garnish) * butter OR olive oil OR other cooking oil (I use olive oil) * Aluminum foil, oven-safe skillet, or square glass baking dish First, toss about 3 cups of croutons into a zip-loc baggy. Squeeze out the excess air and zip up the bag. Using a rolling pin, food can, or drinking glass, crush the croutons inside the bag until they become fine crumbs. If you feel like it won't be enough to cover the tops of your 4 chicken breasts, just toss some more croutons in the bag and do it again until you have plenty. Next, put your mayonnaise into a small bowl and season it generously with the Mrs. Dash Table Blend or some other salt-free seasoning blend. Adding the thyme is optional, but I highly recommend it. DO NOT ADD SALT. The croutons add plenty of salt by themselves. Stir it up and presto... now you have gourmet, seasoned mayonnaise. Now you need to grease the bottom of your baking dish (or makeshift foil dish) so the <b>...</b>
