How to Roast a Thanksgiving Turkey | Williams-Sonoma


Roasting a Thanksgiving turkey can sometimes be a difficult affair. In this video, Williams-Sonoma culinary expert Amanda shows you how to take the guess work out of roasting a Thanksgiving turkey. Before you begin the roasting process, it is important to place the rinsed, dried and seasoned turkey at room temperature for about an hour. Once this has been done, place it on a roasting pan and put it in the oven. If you are stuffing your turkey, it is a good idea to cover the breast part of the turkey with an aluminum foil so that it roasts evenly. If you are not stuffing your Thanksgiving turkey, you should roast it breast side down. Take out the turkey every 30 minutes for basting. It is important to close the oven door when you are basting the turkey, as an open oven door can considerably lower the oven temperature and prolong the cooking time. Continue basting at regular intervals till the turkey is roasted evenly. You can use a probe thermometer or an instant read thermometer to monitor the roasting process. Alternately, you can use the knife and cut into the thickest portion near the thigh to check the quality of the roast. If the knife runs clear of all the juices, the roasting is done. Use turkey lifters to place the roasted turkey on a carving board and cover with an aluminum foil for 20 minutes to let the juices get evenly absorbed. How to Brine a Thanksgiving Turkey | Williams-Sonoma


In this interesting video from Williams-Sonoma, you get to see how to brine a turkey and how brining turkeys is ideal for ensuring a flavorful and moist dish. Williams-Sonoma Culinary Expert Amanda guides every step of the way. The brining process uses salt for providing extra moisture and is useful when you have to roast the turkey for a long period of time. If you are using a liquid brine, you can submerge the turkey for 24-36 hours. The advantage of a liquid brine is that it allows every small portion of the turkey to absorb the salt water, leaving behind a juicy, extra flavorful taste that is not very salty. You can either dissolve salt in water or use a brine mix of salt and spices. A mix for brining turkeys involves first boiling a gallon of water and then adding the brine mix and stirring so that the salt dissolves completely. Recipe: How to brine turkey and other poultry Brining is a process that uses a salt solution to tenderize poultry, whether it's turkey, chicken, or Cornish hen. It helps break down connective tissue to make the bird more tender, and adds flavor, moisture and great taste. These instructions are for a 12- to 14-pound bird. If your bird is larger or smaller, adjust the quantities appropriately. Gather your ingredients and supplies: * 16-18 quart container * 2 gallons of water * 3 cups of salt * 3 cups of sugar * 3 ounces of bourbon (more if you like) * 3 cups of ice 1. Add two gallons of water to any container that is large enough to allow the entire turkey to be immersed. (You'll need a container whose capacity is approximately 16 to 18 quarts.) As long as the container is clean, you can use anything that accommodates the size of your bird. 2. Add 3 cups of salt to the water 3. Add 3 cups of sugar to the water. The sugar helps sweeten the turkey, counteracting the acidity of the salt. 4. Add 3 ounces of bourbon. (Bourbon is also an acid that will help break down the connective tissue of the meat. Secure the neck flap with skewers. Turn the bird over and stuff the bigger cavity with butter, onions, oregano, and orange. Place the turkey on an adjustable rack. Pull out some fresh oregano and chop it. Mix it with butter, salt, and pepper. Rub this on the outside surface of the bird. Place it in the oven and let it cook. Monitor it to prevent burning. Next, create a stock from the neck, giblets, and onions. The stock in the turkey recipe prevents burning. Baste the bird again. Check and repeat if necessary.
