I HATE DRY TURKEY! So I have spent years honing the best recipe for turkey. This is a winner AND it is not hard to make... just need to be shown how. No matter how you cook it (smoke, deep fry, oven bake, rotisserie) you will have a MOIST, TENDER, JUICY turkey! Just follow the instructions in the video. Be sure to cook the turkey until the breast is 155 degF (it will climb up to 160F after removal). Let it rest 15-20 minutes, then carve with a sharp, non-serrated knife. A well cooked turkey dinner is a must for a truly successful and warm Thanksgiving! In this video from Williams-Sonoma, featuring Chef Michael Voltaggio, you can watch the basics of preparing a scrumptious sous vide dinner. Cooking sous vide uses a unique method of slow cooking of food items in a vacuum-sealed pouch, inside a water bath. In this first part of the series, the chef shows you how to first split the turkey into smaller parts. To cook a turkey in this gourmet style, first split the thighs and legs of the turkey. Next, split the rib cage and pop it back. Make sure the skin is intact. Then, split the inside right on the rib cage. Save all the pieces for the sauce later. Cut out the wings. Next, flip the bird over. Use a cleaver to flatten the bird and separate the breasts of the turkey. To cook a turkey sous vide, drop the remaining, un-chopped turkey piece into the brine. Separate the legs from the thighs and drop the legs into the brine as well. Then, remove the bones from the thighs. Bag and season all remaining parts. How to Sous Vide a Turkey with Chef Michael Voltaggio Part 2 | Williams-Sonoma


In the second part of the series, Chef Michael Voltaggio shows you the next steps of how to cook a turkey sous vide style. Michael advises that each part of the bird requires a different temperature and time, and hence needs to be bagged separately. To cook a turkey, first season the thighs with salt and pepper and bag them with the flavors that go best with roasted turkey like sage, garlic, and duck fat. Crush and add two cloves of fresh garlic to the bag. Also add a couple of sprigs of sage and a few sprigs of thyme. Add two spoons of duck fat, and seal the bag to shut off air. Leave the bag in the water bath to cook the turkey sous vide style. Remember, not to touch the area of the bag which needs to be sealed. Now, place the brined legs in a sealed bag and then in the water bath. Follow the same procedure for the turkey breast and other bagged portions. The chef advises that thighs need two hours, while all the other parts need two and a half hours. Remove the bags. Refrigerate the bags after they cool down. You can keep these turkey parts ready 4-5 days before Thanksgiving to cook a turkey conveniently. That way you get to enjoy the holiday to the fullest! In the third part of this series, Chef Michael Voltaggio shows you the final steps of how to cook a turkey. On the actual Thanksgiving day, re-therm the refrigerated bags in the water bath after setting the bath to a temperature of 150 degrees F. To completely cook a turkey, first remove the thighs from the bag and pat the thighs dry. Pre-heat a sauté pan with vegetable oil. Place the thighs in the pan to fry them nice and crispy. Next, remove the turkey legs and other parts one by one. Pat them dry. These parts are all brined and already cooked sous vide. But you need to cook these poached parts completely by deep frying them. Place them in a deep fryer one at a time, and cook them golden brown. Your beautiful gourmet sous vide turkey is ready! Enjoy!
